Ingredients

Dough:
wheat flour of the highest grade 200 g
butter 100
salt 1/4 tsp
sugar 1 tsp
sour cream 15% 75 g
Custard:
egg yolks 3 pcs
sugar 100 g
vanilla sugar 10 g
milk 180 g
corn starch 15 g
Filling:
raspberry 135 g
corn starch 2 tsp
Additionally:
egg yolk 1 PC
sugar 1-2 tsp
powdered sugar for serving

Cooking method

  • Biscuit with custard and raspberriesPrepare the custard. Grind the yolks with sugar and vanilla. Add starch. Stir so that there are no lumps. Pour in milk. Place the bowl in the microwave (do not cover with anything) and cook at full power for 3-4 minutes. Remove the bowl from the microwave every minute and stir the cream. Cover the finished cream with a film so that it touches its surface, cool.
  • Biscuit with custard and raspberriesMix flour with sugar and salt. Add chunks of cold butter.

Note

Custard can also be prepared in the traditional way:
- Grind the yolks with sugar
- Add starch. Stir so that there are no lumps.
- In a saucepan, bring the milk to a boil with vanilla.
- Pour half of the hot milk into the yolks. Stir quickly.
- Pour the mixture into a saucepan with the remaining milk. Return to low heat. Cook, stirring occasionally, until the mixture thickens.
