Ingredients

A hen 1200 g
Cabbage pickle 750 ml
Cold boiled water 200 ml
Juniper berries (dried) 7 pcs.
Ground black pepper 0.5 tsp
Lemon (juice) 0.5 pcs.
Sweet peas (ground) 1/3 tsp
Vegetable oil 2 tbsp. l.

Cooking method

  • Baked chicken (marinated with cabbage brine)Pour cabbage brine and water into a deep bowl. I have a vigorous sweet and sour brine, so I don't add salt and sugar. I add black pepper, ground sweet peas, juice from half a lemon to it and mix.
  • Baked chicken (marinated with cabbage brine)Grind the juniper berries in a mortar.
  • Baked chicken (marinated with cabbage brine)I add to the marinade and mix.
  • Baked chicken (marinated with cabbage brine)I put the washed chicken in the brine on the back. With a tablespoon I go under the chicken skin and pour 2 tbsp. l. brine along with pieces of juniper berries.
  • Baked chicken (marinated with cabbage brine)I close the bowl with a lid and leave it to marinate in the refrigerator for a day. After 12 hours, I turn the chicken back up.
  • Baked chicken (marinated with cabbage brine)After a day, I take out the chicken, dry it well with a towel outside and inside. From under the skin I take out pieces of berries.
  • Baked chicken (marinated with cabbage brine)Then I cut the chicken along the breast and dry it again with a towel inside.
  • Baked chicken (marinated with cabbage brine)Cover the baking sheet with foil. I grease the foil with vegetable oil. I lay the chicken cut down. I grease the top of the chicken with vegetable oil.
  • Baked chicken (marinated with cabbage brine)I put peeled potatoes around the chicken, cut lengthwise 0.5 cm thick. Grease it with vegetable oil, salt and sprinkle with potato seasoning. I put in a preheated oven and bake at 180 degrees for 50 minutes - 1 hour until tender. Take a look in your oven. I periodically water the chicken with the released juice.

Once I decided to cook chicken according to a new recipe, in which white wine was required for the marinade, and only red wine was available at home. I didn't want to go to the store from the word "absolutely", but the chicken was waiting. And then it dawned on me - there is cabbage pickle in the refrigerator! We eat cabbage, and I always leave the brine for baking bread or additives in soups or main courses. So I ventured to cook a marinade on it. The result was impressive - the chicken turned out to be very juicy, tender and aromatic. Now I cook like that periodically.

I marina any meat that I am going to bake in a piece, even just in a saline solution (it is then juicier and softer), but it never crossed my mind about cabbage brine, thanks for the idea! Probably cucumber will do too? I save from home cucumbers, add to cabbage soup and hodgepodge.
I can already imagine how fragrant the chicken will be.
