Liquid yeast pie with potatoes, sauerkraut and mushrooms in a Redmond multi-chamber

Ingredients

For the test:
Water 460 ml
Flour 400 g
Egg 1 PC.
Sugar 40 g
Salt 1 tsp
Yeast 1.25 tsp
For filling:
Potatoes 130 g + 400 g
Fried sauerkraut with fried mushrooms 270 g

Cooking method

  • As usual with me lately, the essence of the recipe is not in the products, but in the process technology.
  • 1-1.5 hours before baking, knead yeast bulk dough and send it to the heat for fermentation (slow cooker, "Yogurt" program).
  • In this recipe, I include enough ingredients to make the dough make up 2 cakes in the RAMB-116 panel (large multi-baker, pizza panel). In MP6, this number of products will produce 4 cakes on the RAMB-16 panel, since the consumption per tab is about 2 times less,
  • Put 5-6 tbsp on the cold panel. l. dough (200-210 g) and level (very convenient with a silicone spoon!).

  • Then we spread the filling. On average, the fillings should be 400-450 g. This pie was started to add 270 g of fried sauerkraut with fried mushrooms, so the first layer I laid out 130 g (400-270 = 130) of thinly sliced potatoes by Berner:

  • Spread cabbage with mushrooms on top. The cabbage was salty, so the potatoes were not salted:

  • Next, zizagami laid out the top layer of dough (250-260 g), leveled it and made a hole in the center for steam to escape.
  • Unfortunately, there is no photo. Therefore, for clarity, I present a photo of this stage for a pie with a different filling:

  • I inserted the panels into the MP, turned it on and closed (I do not snap the latch).
  • In 17 'the cake is ready.

  • With so little raw potatoes in the filling, I suspect 15 'would be enough.
  • I used the second part of the dough for a potato pie. 200 g of dough on the bottom panel, spread 400 g of potatoes evenly, season with salt, pepper, "half" to taste. Spread 10-15 g of butter on top with thin plastics. Lay out the top layer of dough (250 g). Flatten. Baking time - 17-19 '(today was 17').

The dough is slightly (very light!) Sweet. Therefore, if you do not like the combination of such a dough with unsweetened filling, reduce the amount of sugar in the dough.

Linen! Shivering is our FSE! It only takes time, of course. Well, nothing, and we will master it on the weekend. Half the dough for one pie, right? I'm thinking of doing it with cabbage and egg.
Accomplishment
Today I was just thinking whether it saves time or not? I decided - compared to ordinary yeast - it saves. In part of the time for the approach of the test - faster, in terms of equipment - there are no rolling pins / rugs.
I can give you a general recommendation. If you want dough in the morning, knead in the evening and put it in the refrigerator. In the morning you get it out - if it's not ready, put it in a slow cooker on "yogurt" for 20-30 minutes. And if you cook during the day, you can probably bake right away or let it warm up a little.
Niarma
Elena, and how much is the total height of the pie turned out? Do you think you can make this (pies) in an omelette?
Accomplishment
Marina, good evening!
At first I measured all of them, but now I can't remember for sure :). I think, if you do not overdo it with filling and dough, then the thickness is 1.8-2cm. You can make it thicker, but then the lid will rise with the dough and the top will brown unevenly. We'll have to turn it over. This is me about the multibaker.
If we are not talking about the multi-baker's omelette panel, but about the omelet maker as a separate device, then, as I understand it, the shape is deeper there! It's great! This means that a higher cake can be baked! Again, I don't know how powerful the omelet maker is, but with the finished filling, the pie should turn out in any case. But if there is raw potato in the filling, it's a question. What is the power and depth of the omelette?

Completion Elena, thanks for the recipe!
Accomplishment
Natalia, I'm glad that I liked the recipe! And at least according to this principle I baked different pies, this one - with potatoes, cabbage and mushrooms - was, well, very tasty!
Niarma
Elena, I have Ariete Omelette Maker, power 700W (the same as Travola), the depth of the lower cells is 2cm and the upper ones are about 1.5cm. But I only disposed of the leftovers in the form of casseroles.
Accomplishment
Oh, Marina, I was really jealous of the depth of the panels !!! You can fry such lush pies!
Take ready-made filling such as mashed potatoes or ready-made cabbage for a start and cook without hesitation! Or you can put a thin layer of raw potatoes for a sample on the lower dough (mm 3-5) - check how it is baked, and get the finished filling to the desired thickness.
Good luck! Bring ready-made pies, very interesting !!!

Niarma
Elena, thanks for the answer. I will try your dough, however, with a different filling (I don’t like sauerkraut in dishes, I only eat it "alive")

Elena, came to say thank you for the pies!
I don't have a multi-baker, so far only in my dreams ... But I liked the recipe, and I baked two pies in the Princess pizza makers (I have two of them). One with stewed sauerkraut with mushrooms, and the other with potatoes, raw, also chopped on the Berner. I liked everything, about raw potatoes, a discovery for me, I used to cook only with mashed potatoes. I just can't insert a photo, writes that it is "heavy", although I always inserted a photo from the phone and it was fine. But everything worked out well, the dough rested against the lid.
In general, I like your recipes, everything is fast, tasty and the portions are large ...))) I really need it, I also cook for a large company
I hope someday I will buy a multibaker, and we will try everything.
So thanks, from me and my men!

Anya, I am very glad that everything turned out well! It's a pity that there are no photos, but maybe it will work out somehow ...
I wonder how thick the pie with raw potatoes is and what is the layer of this potato itself? And how long did you bake it?

What thickness I did not measure, but to the entire height of the Princess, and she is 4 centimeters.
The potatoes are in one layer, but they overlap strongly, so almost in two.
Bake for 15 minutes.
Accomplishment
Anh, right now I will torture you with additional questions! There would be pictures, everything would be clear. That is, there are a little potatoes in it, or did you cut them thickly?
15 '- very fast by multi-baking standards for raw potatoes.

Elena, I didn't take intermediate photos, only the final result, and then from above.
Somehow there was no time yesterday, everything turned out spontaneously. I was not going to cook anything in the evening, at 6 o'clock, I think there is no baking at all at home .... a mess ... * JOKINGLY * and in the morning I’ll have a quick snack for everyone before work-college-school-kindergarten.
I remembered about this dough, and that the sauerkraut had already stood, kneaded this dough, set the filling to simmer. My husband and eldest son love cabbage in pies, but the middle and youngest do not eat. Therefore, the second pie was needed with potatoes, so as not to bother with mashed potatoes, I decided to try it with raw potatoes. Peeled 4 medium-sized potatoes. And then the younger son runs into the kitchen and asks what I am cooking. And I said, I wanted buns without anything .... Well ... I also put the dough in the HP on the bagels. Therefore, I did everything quickly, there was no time for the photo.
The potatoes were cut on the Berner on the insert of the plug, it is not thick at all, medium size. When I laid it in one layer, it didn't fit, and I laid it with an overlap.
For Princesses, this is the usual time, I am there all the pies, pizzas for 12 minutes. I bake. And potatoes are baked quickly.

Anya, that's what we are, after all, with all our differences, the same! No legs to stretch out, read a book ... Nooo! Pie with this for this, with this for this, and, like the cherry on the cake, scarlet flower bagels without anything for the little one! And so the time before night flew by unnoticed. But I didn't cook at all - so, for tea ...
Is the same bullshitand regularly

I am very grateful to you, our dear Lenochka, for another masterpiece. Got this recipe today. One pie was made with potatoes, onions, cheese and canned mushrooms, the other with potatoes, onions and pumpkin. I cut everything (including the mushrooms - they were whole) into thin slices on my Keshik. It turned out very quickly and tasty. He came out striped because he was cooling down on the grate)))

night_furia, Margosha! I almost missed it!
What intricate and unusual fillings you have!
Thanks for your feedback!
And I, in fact, came to say that I baked a pie with apples from this dough in the oven and with potatoes in the cousin. I liked it very much, because the preparation of the dough and the shaping is much faster than with a regular dough. Photos and some details here.

Lenochka, I then did it with pumpkin, sugar and an apple, because give my husband a sweet pie))) But he flew away so quickly that I didn't have time to take a picture.

I feel Irkutsk is a city of pumpkins! Great combination, lucky husband!
