Wholegrain banana muffins with orange and chocolate

Ingredients

peeled ripe bananas 300 grams
eggs C-O 2 pieces
low-fat kefir, natural yoghurt, low-fat fermented baked milk 70 ml
whole wheat flour 250-275 grams
bitter chocolate 40 grams
Orange juice 2 tablespoons
freshly minced orange peel 1 teaspoon
stevia / stevioside / rebaudioside 1 coffee spoon
salt pinch
soda 1/2 teaspoon
baking powder 2 teaspoons

Cooking method

  • Pour soda into kefir, stir, leave for 5 minutes.
  • Then add eggs to kefir, stir well.
  • Make mashed bananas with a blender. Add orange juice and zest, finely grated.
  • Put in kefir mixture. Stir.
  • Put salt, stevioside, baking powder in 200 grams of flour. Pour into kefir-banana mixture. Then add a little more flour to get a dough with the consistency of thick sour cream.
  • Arrange into molds. I have silicone. Sprinkle with chopped chocolate on top.
  • Bake in an oven preheated to 180 degrees for 40-45 minutes.
  • Willingness to test with a stick.
