Ingredients

a hen 1 pc (1.500-1.800 kg)
Brine:
water 2 liters
salt 90 g
sugar 16 g
red wine vinegar 1 tbsp. l
black peppercorns 6-8 pcs
allspice black pepper 5-6 pcs
carnation 2-3 pcs
Marinade:
sour cream or mayonnaise 70 g
smoked sweet paprika 1 tsp
dry garlic 1 tsp
mixture of 5 peppers, freshly ground 3/4 tsp

Cooking method

  • Grilled chickenBring one liter of water to a boil with sugar, salt, cloves and pepper mixture. Remove from heat, add a liter of water and vinegar. Cool completely.
  • Put the chicken in the brine. Refrigerate for 12-24 hours.
  • Grilled chickenFor the marinade, mix all the required ingredients.
  • Grilled chickenRemove the chicken from the brine, dry thoroughly. Lubricate the inside with marinade, put on a spit. Coat the outside with marinade.
  • Tie the chicken legs with a culinary thread (I wrapped the wings over the back and also secured it with a culinary thread).
  • Grilled chickenPlace the spit in the oven. Put a baking sheet down, covered with foil.
  • Grilled chickenBake in the "grill" mode at a temperature of 220C degrees for about two hours.
