Fried garlic bread using the old dough method

Ingredients

Wheat flour 450 g
Whole grain wheat flour 50 g
Serum 325 g
Vegetable oil 25 g
Fresh garlic 17 g
Salt 10 g
Wheat sour milk ferment 100% 200 g

Cooking method

  • Mix the starter culture from the refrigerator with warm whey and 325 g of flour, set aside for storage 200 g.
  • Add the rest of the wheat flour (125 g) and cz flour (50 g) to the remaining leaven. Stir, cover and leave for 30-60 minutes.
  • Pass the garlic through a press, fry in oil until soft, avoiding darkening, cool.
  • After a lapse of time, start mixing at medium speed for 5 minutes.
  • Add salt, sauteed garlic and butter and knead for another 3 minutes.
  • Fold the dough in an envelope, place in a greased container, cover and leave at 24C for 2 hours with one wrinkle after 60 minutes.
  • Then knead the dough, round and leave for 20 minutes.
  • Finally shape (I did it in three rolls), put in a mold and leave at room temperature until it increases by 2.5-3 times. I got 5 hours. Can be left in the refrigerator at 4C for up to 18 hours.
  • Sprinkle with water before baking.
  • Bake at 230C for about 30 minutes.
