Sourdough cake with olives using old dough method

Ingredients

Wheat flour 450 g
Whole grain wheat flour 50 g
Serum 315 g
Salt 7 g
Wheat sour milk ferment 100% 200 g
Olives w / c 125 g

Cooking method

  • Mix the starter culture from the refrigerator with warm whey and 315 g of flour, set aside for storage 200 g.
  • Add the rest of the wheat flour (135 g) and all the whole wheat flour to the remaining leaven. Stir, cover and leave for 30-60 minutes.
  • After a while, start mixing at medium speed for 5 minutes. I added 2 more tbsp during the kneading process. l. serum.
  • Add salt and knead for another 3 minutes.
  • Dry the olives, chop finely, add to the dough. Knead on low speed until evenly distributed, about 2 minutes.
  • Fold the dough in an envelope, put in a greased container, cover and leave at 24C for 2.5 hours with two wrinkles after 50 minutes.
  • Next, on a baking sheet covered with paper, put the dough, with greased hands, spread the dough into a cake. Cover with a bag and leave on the table until increased 2.5-3 times for about 4 hours. Can be refrigerated at 4C for up to 18 hours.
  • Before baking, pierce in several places with a knitting needle, sprinkle with water.
  • Bake in an oven preheated to 230C for about 30 minutes.
