Bigus (according to I.I.Lazerson's recipe)

Ingredients

Sauerkraut 500 g
Fresh white cabbage 500 g
Large onion 1 PC.
Mushrooms (I have frozen mushrooms) 200 g
Pork (neck) 300 g
Tomato paste 3 tbsp. l.
Celery 2 stems
Sausages 100 g
Pitted prunes 100 g
Madera (or Jerez) 200 ml
Bay leaf 2 pcs.
Vegetable oil 4 tbsp. l.
Salt pepper taste
Green onions, parsley to serve

Cooking method

  • I cooked in two multicooker: Brand 37501 and Steba DD2.
  • Bigus (according to I.I.Lazerson's recipe)Installed the "Quenching" mode in the Brand multicooker, 3 hours. She poured some vegetable oil at the bottom and laid out sauerkraut. I closed the lid. I did not open the lid for 1 hour.
  • If the cabbage is very "vigorous", then it should be thoroughly washed. If chopped coarsely, grind additionally.
  • Bigus (according to I.I.Lazerson's recipe)In the meantime, I cut up the white cabbage.
  • Bigus (according to I.I.Lazerson's recipe)Chop the onion not too finely. I switched on the Steba slow cooker, the "Fry" mode, poured the remaining vegetable oil and put the onions.
  • Bigus (according to I.I.Lazerson's recipe)I cut the pork into pieces of about 2 * 2 cm. When the onion is browned, I added meat to it.
  • Bigus (according to I.I.Lazerson's recipe)Fried the meat until golden brown. Then she put the fried onions and meat into a bowl.
  • Bigus (according to I.I.Lazerson's recipe)I cut the stalks of celery and sent them to the Steba multicooker.
  • Bigus (according to I.I.Lazerson's recipe) I added mushrooms there (did not defrost). I covered it with a lid and fried celery and mushrooms for about 15 minutes.
  • Bigus (according to I.I.Lazerson's recipe)I sent the finished celery and mushrooms to a bowl with onions and meat.
  • Bigus (according to I.I.Lazerson's recipe)And then she added the coarsely chopped sausages that were fried in Steba into the same bowl.
  • Bigus (according to I.I.Lazerson's recipe)An hour after the start of stewing sauerkraut, Brand added fresh cabbage, tomato paste, half a measured portion of Madeira and the entire contents of the bowl to the multicooker. Stirred, closed the lid for another 1 hour.
  • Bigus (according to I.I.Lazerson's recipe)Coarsely cut the prunes. When there was 1 hour left on the multicooker display, I added prunes to the contents, bay leaf, the remaining Madeira, salt and pepper. She mixed everything, closed the lid and did not interfere with the process anymore.
  • Bigus (according to I.I.Lazerson's recipe)At the end of the "Extinguishing" mode we have the following picture.
  • Bigus (according to I.I.Lazerson's recipe)Serve with chopped green onions and parsley.
  • Bon Appetit!

Very interesting! In general, for some reason I even fear the word "bigus" for some reason ... Probably, I'm afraid to screw it up in the bud.
And here everything is clear and understandable.

Sausages can be any sausage suitable for grilling. At worst - smoked sausages or wieners.

So this changes things! (from)

Girls. if anyone will do it with purchased sauerkraut - let me know how it is. Well, I don’t have my own and it’s not known whether it will be.
gala10
Dina, I did just with purchased sauerkraut. Its not yet. Just try how it tastes to you. If it's too salty, rinse. And then it is put out properly, and everything is fine.
