Pies with bacon (Speka Piradzini)

Ingredients

Dough
wheat flour / grade 280 g
vegetable oil b / s 25 ml.
egg C1 1 PC.
milk 75 g
water 75 g
sugar 20 g
salt 4 g
pressed yeast 8 g
Filling
smoked brisket 250 g
turnip onion 1 PC.
ground black pepper taste
ground caraway optional taste
egg + 1 tbsp. l. milk for lubrication

Cooking method

  • Pies with bacon (Speka Piradzini)I kneaded the dough in HP (7 * 5 * 12).
  • Dissolve the yeast in water with milk. Pour into a bucket. Add sugar, egg and flour. After seven minutes of kneading, add salt and add oil. The dough is soft, slightly sticky. Dump the dough onto the table. Round off.
  • Pies with bacon (Speka Piradzini)Put the dough in a bowl, tighten with plastic wrap and send to the refrigerator for 1.5-2 hours.

  • Pies with bacon (Speka Piradzini)Cut the brisket and onion into small cubes.
  • Pies with bacon (Speka Piradzini)Put in a frying pan. Over low heat, stirring occasionally, wait until the brisket gives fat.

  • Pies with bacon (Speka Piradzini)Divide the dough into 10-20 parts using a scale. Tuck each piece into a ball. Cover and leave for 10 minutes.

  • Pies with bacon (Speka Piradzini)Place the patties on a baking sheet lined with a rug or baking paper, seam side down and shape the patty into a crescent shape. Cover and leave for 30 minutes.

  • Pies with bacon (Speka Piradzini)Put the pies to bake in an oven preheated to 180-190 degrees for 20-25 minutes.

Note

This is the national dish of Latvia. Such pies are baked very small for two bites. I made them larger, in the usual size for us.
Not a single holiday, buffet, or picnic in Latvia is complete without them. These mini pies are sold in all pastry shops and supermarkets. This is delicious. Recommend!

Thanks for the recipe, I tried such pies, although there was even just ordinary salted bacon, but it was amazingly tasty, I didn't even understand what the filling was there at first - it looked like an egg with onions ..))))
