Undercover Herring Salad

Ingredients

Light-salted herring 2 pcs
Mushrooms (I have champignons) 300 - 400 gr
Onion 2-3 pcs
Carrot 2 pcs
Vegetable oil (for frying) 40 - 50 ml
Ground black pepper optional
Green onions, parsley for decoration

Cooking method

  • We will prepare the products necessary for the preparation of this dish

  • We clean the herring, cut into fillets and cut into pieces of about 1-1.5 cm
  • Cut the mushrooms into slices, but not quite thin
  • Peel the onion and cut into half rings
  • Peel the carrots and cut into strips. I grated Berner Rocko (for Korean carrots)
  • Pour vegetable oil into a hot frying pan and add chopped onions. Fry the onions until they are transparent, do not fry too much

  • Transfer the onion to a bowl or plate, trying to leave the remaining oil in the pan.
  • We spread the carrots in the pan and fry until golden brown, stirring all the time.
  • You can, of course, add more oil when overcooking carrots, but I did not do this. I don’t need extra oil, and therefore I stewed the carrots almost in a dry frying pan, stirring intensively and covering the pan with a lid several times

  • When the carrots are fried until golden brown, add the mushrooms to the carrots.
  • Fry the carrots with mushrooms for 5 minutes, stirring all the time.

  • After the time has passed, add our lightly fried onions to the carrots with mushrooms

  • We reduce the temperature to a minimum, cover the pan with a lid and simmer for a few more minutes.You can stir several times.
  • Turn off the fire. And pour the chopped herring into the hot vegetable mixture with mushrooms.

  • Mix the salad well. A serving ring can be used for serving. But I was preparing the salad purely for evening dinner, so I just put it in a salad bowl.

  • Garnish with green onions or parsley.

This unusual salad with an original taste somehow caught my eye in one of the SC. I copied it into my Cooking Notebook and forgot about it. And recently I was looking through recipes for herring snacks and came across it. I decided to try cooking, which I did not regret at all. The taste is unexpectedly amazing. The dish has its own special, unique, memorable taste.
The salad turned out to be very unusual, it is easy and quick to prepare and it is not at all a shame to serve such a salad even on a festive table.
Simple, and the result exceeded all expectations!
The dish can be eaten hot, it can be cooled to room temperature, or it can be prepared in advance and placed in the refrigerator.
And moreover, each time the taste of this salad will be different. Here you have to try and select the best option for yourself.

It seemed to me that in a warm form, the salad tasted softer, the herring was not so strongly felt, but vegetables and mushrooms with a subtle aroma of seafood played more in the taste. When cold, the herring taste is already deeper. I liked the warm salad better. But the husband is just the opposite, today's from the refrigerator. He said yesterday that - delicious! but the cold one will probably taste better!
