Closed fruit cake made from pseudo puff pastry with whey

Ingredients

Serum (cold) 250 g
Vegetable oil 30-50 g
Sugar 1 tsp
Salt 1/2 tsp
Flour / s 400 g
Butter (from the freezer) 75-100 g
Soda 1 tsp (not full)
Filling
Any fruits and berries (I have a plum) 500 g refined.
Starch 3 tbsp. l
Sugar 4-6 st. l

Cooking method

  • Knead the dough according to the recipe Universal whey dough (pseudo-layered) Let the dough stand for 2-3 hours in the refrigerator.
  • From this amount of dough, you can make one large cake or two small ones - d = 22-24 cm
  • Cut the plum in halves and peel it.
  • Roll out 2/3 of the dough on the bottom of the cake. The thickness of the rolling is about 0.5 cm. Sprinkle the dough with starch (2 tbsp. L) indented from the edges. Spread the halves of the plums on the sprinkled starch, sprinkle them with sugar and the remaining starch. Roll out 1/3 of the dough for the top - it is slightly thinner and smaller. Cover the plums with it and carefully pinch the edges of the top and bottom around the pie. Press the seam with a fork. In the middle we will make a hole for steam to escape. Lubricate the surface of the pie with a beaten egg.

Girls, do you need to roll frozen fruits in starch?
Yuliya K
Natasha, I usually douse the frost with water and let it stand for a little (5-10 minutes), and then I roll the half-thawed one in starch.
