Pickled silver carp Sugudai

Ingredients

Fish 2.0 kg
onion 2 pcs.
sunflower oil 100 g
Marinade
water 1 liter.
salt 240gr.
sugar 90 gr.
vinegar 9% 100gr.
black peppercorns 15 pcs.
allspice 10 pieces.
Bay leaf 4 things.
carnation 2 pcs.
coriander beans 1 tsp

Cooking method

  • We clean the fish and cut off the fins, head and tail.
  • We cut the carcass along the ridge, separating the fillet from the bone.
  • Then we cut each half lengthwise and then crosswise into 1.5-2 cm pieces. I cut the tail into rings.
  • Boil the marinade with spices and cool until warm.
  • We put the fish in a separate bowl (pan) and fill it with warm marinade.
  • We set the oppression on top (3 l. Jar of water)
  • We keep the fish in the marinade for -10 hours, it is possible at night.
  • Then we put the fish in a jar or vessel, sprinkle with chopped onion rings or half rings as you like and fill with vegetable oil on top.
  • We put it in a cold place on the balcony if it's already cold, but preferably in the refrigerator. The fish can be stored in the refrigerator for up to 1 month ... I think that you will eat it very quickly ... it turned out sooooooo delicious.
