Portuguese cod with potatoes and bell peppers

Ingredients

Cod 2 pieces - 300-400 g
Olive (vegetable) oil 2 tbsp. l. + 1 tbsp. l.
Potatoes 8 pcs. chalk.
Garlic 4 teeth
Bell peppers (green and red) 2 pcs.
Onion 1 PC.
Olives, seedless
Any greens or vegetables to your taste (spinach, savoy cabbage ...)

Cooking method

  • Put the fish in a baking dish, garlic squeezed in a garlic press on top. Drizzle with oil. Bake in preheated to 180 gr. Oven for about 20-30 minutes.
  • Boil the potatoes, without peeling, in salted water. Also boil vegetables, whatever you like.
  • Cut the onion into half rings, and the pepper into strips. Fry onions and peppers in a small amount of vegetable oil until tender. Season with salt, pepper and add the olives, chopped as desired.
  • When the potatoes are boiled, drain the water, remove the potatoes and lightly press on each potato, but do not crush hard, only to burst. Put in a dish with the fish and bake for a few more minutes (preferably with convection).
  • Serve with boiled vegetables, fried onions and bell peppers, drizzled with olive oil.

A truly Portuguese dish.

Most often, the Portuguese prepare cod this way. Even at Christmas it is cooked like that as a main course. But they have thousands of recipes for its preparation. I also really fell in love with this fish.
