Egg white (c0) 5 pieces
Powdered sugar 150 g
Ground almonds 50 g
Poppy 80 g
Wheat flour 20 g
Butter 82.5% 50 g
Raisins 50 g
Lemon or orange zest (optional)
Chocolate 50 g
Oven 180C
Detachable form 20 cm

Cooking method

  • The recipe for this cake was born in my head quite by accident. In fact, the idea did not belong to me, my humble work consisted of a small change in the main recipe and testing it.
  • The basic recipe is taken from the book "Confectionery" by Maria Gaikova (Martin, "Osvet Publishing House", 1990). The book is very good and it would not be worth it if the publishers took the trouble to make a quality translation from Slovak. A very competent preface to the book was written by professional technologists. But the translation of the recipes was made handicraft and for the most part does not stand up to criticism, against its background typos like "apple squirrels" are just trifles.
  • Product Comments... It is best to take dark chocolate without sugar (90%). Pre-soak the raisins with a couple of teaspoons of strong alcohol (cognac, liqueur, berry tincture). Almonds do not need to be peeled and simply grind with a blender (I take almond flour of domestic production "Unitron", the nuts in it together with the skins, which gives the baked goods a pleasant almond aroma and is coarsely ground). If using commercially available icing sugar, it should be free of caking agents (usually starch is added).
  • Step-by-step instruction.
  • The technology is very simple, so I did not take step-by-step photos.
  • By the time the dough is finished, you should have a preheated oven and a baking dish (oiled and floured).
  • Powdered sugar must be sieved and set aside 50 grams for whipping with whites.
  • The flour must be sieved twice.
  • Grind poppy seeds in a coffee grinder.
  • Grate chocolate.
  • In a bowl, combine the powdered sugar (100g), flour, almonds, chocolate, zest, poppy seeds and mix well.
  • Melt the butter.
  • In a clean bowl, beat the whites until fluffy, add 50 g of powdered sugar and continue to beat until a strong shiny mass is formed. When the bowl is turned over, the protein mass should not flow, and the whisk should leave a clear pattern. Gently add half of the dry mixture and gently wringing movements from center to edge, mix it into the whites, add the other half of the dry food, raisins and mix until smooth. Pour lukewarm oil along the wall and stir vigorously again. Do not stir for a long time, as the proteins settle. Pour the dough into a mold and bake in the oven for about 30 minutes. Luchina should come out dry.
  • Remove the cake from the oven and let stand in the tin for about 10-15 minutes and then carefully remove it on the wire rack. Cool the pie completely, put on a dish and sprinkle with powdered sugar.
  • The taste of the finished cake is so balanced that it does not require filling or glazing. The texture is quite light, dark chocolate gives a pleasant bitterness, and butter softens the crust. Fans of poppy pastries will surely like this option.

Svetlenki, powder without starch is on sale in Metro. If there is no powder, you can grind the sugar in a coffee grinder.
