Maria, I really don't know why it happened ... It seemed to me that this dough was generally problem-free, I made it many times with kefir and whey. The amount of soda for raising the dough is quite sufficient - I once had the dough for half a day on the table while I was going to bake it, but as a result, the same cake turned out as always. And what did they bake in? In the oven?

After adding the baking soda, I keep it on fire for a total of no more than a minute, stirring for a better reaction. You don't need to keep it longer. And somehow I don't use mozzarella serum - I pour it out, so I won't even tell you anything about it. Try again, with another sour milk, everything should work out

Alla, yes, it is quite possible that Maria did it - and the acid activation yoghurt is quite neutral and the mozzarella serum, I think, too ..
I don't even know about three layers from one form, I only baked a whole sheet in the oven ... and made a cake from four layers half a sheet in size. It seems to me that the easiest way is to cut the layer in half and dissolve each half into two cakes in thickness.

Evgeniya, I usually make from 20% sour cream. A waffle cake needs impregnation at least overnight, like an ordinary honey cake made from hard cakes, and it is not necessary to wait so much time for cakes baked in one layer and cut - they are soft in themselves and you can cut the finished cake in 1-2 hours. But of course the next day the cakes become even softer.

If there is no oven, then this is all the more necessary unit! Yuliya K, Yul, very quickly for some reason, about 5 minutes at most 7. I checked for dryness with a toothpick. It was already possible to take it out, but I stubbornly wanted to "finish it" and kept it for 10 minutes. Next time I will not show off: the toothpick is dry - take it off. They are so soft that after 10 minutes they are soft. The last third one was removed after 5 (it did not reach the brim with me, I smeared it to the desired size) absolutely did not differ from the first two.
