Ingredients

Quinoa (or barley grits) 100 g
Salted herring 1 PC
Vegetable oil or butter 50-100 g
Ground black pepper taste
Green onion taste

Cooking method

  • Various variants of such "caviar" with semolina may have already been tried by many, it's tasty, but in my opinion it doesn't look like caviar. But boiled quinoa has an ideal structure for this: its transparent bursting grains really resemble eggs, and in conjunction with the oil and herring mass, they add similarity to "fish caviar" both in appearance and in taste.
  • Boil the quinoa first. The proportion of cereals / water is 1: 2. You can cook in a multicooker or on the stove in the usual way. Cooking time 15 min + 5 min steaming under the lid. The cereal absorbs all the water, becomes crumbly and voluminous, now it needs to be cooled. I cook in advance, transfer to a container and refrigerate.
  • Herring caviar snack. Variants with quinoa and barley.
  • Grind the herring fillet with a blender, pepper, mix with butter - any of your choice - it can be softened butter, vegetable (olive) or ready-made mayonnaise (if the herring is slightly salted). Add boiled quinoa to the mass, stir, add chopped green onions, transfer to a suitable jar or container and let it brew in the refrigerator. We smear it on black bread or a baguette and enjoy!
  • But if quinoa is not available, then there is another - a more budgetary and no less tasty option with barley grits (this time I have it).
  • This cereal has a similar bursting texture and a neutral taste. It is better if the barley grits are already in the cooking bags. We cook a bag according to the instructions from the package - I have it for 20 minutes. Cool and loosen with a fork. Mix with herring mass and green onions. If the herring is caught with caviar, then you can add caviar by removing the films from it and loosening it with a fork.

  • By the way, barley groats are much older than quinoa, they have plenty of useful properties, and since it is produced from whole-ground barley, it retains all its best qualities: high content of dietary fiber and easily digestible protein, rich composition of essential trace elements and vitamins. The main advantage of quinoa is that it belongs to gluten-free cereals.

For this dish, it is not necessary to choose the most beautiful and fatty herring; rather, on the contrary, it usually contains medium quality herring.
