alder leaves 45%
raspberry leaves 13-14%
currant leaves 15%
apple tree leaves 10%
thorny leaves 8-9%
geranium leaves 3-5%
lavender (sage, oregano, thyme, mint) 3-5%

Cooking method

  • This tea recipe is a continuation of the "alder" tea theme, begun after the discovery of the wonderful properties of alder leaves from a tea point of view. You can read about it here in this report... To date, for me, this is the most aromatic and delicious tea mix, not made from Ivan tea. Although you can safely replace some of this mix with Ivan tea leaves.
  • I thought over and made the composition of this tea in advance, based on the main taste and aroma notes of each component of this mix. All leaves were harvested, withered and tempered by this method... It so happened that each of the components was in its own package. So I mixed them right before chopping. When all the ingredients were mixed on the sheets after hardening, there was such an amazing fabulous aroma that it is difficult to describe in words !!! An amazing floral-fruity enveloping and soothing green-sweet aroma of freshly cut white flowers, lavender and the freshest fragrant berries and fruits. Still, the Zakhar hardening method contributes to a significant identification of the taste and aroma of tea leaves. Interestingly, the leaves of the thorny plum, especially those collected from young growth with reddish leaves, after hardening, appeared a clear almond note in the aroma.

  • Then I turned this fragrant mixture twice in a meat grinder, while trying to remove the hard veins and stems from the leaves, which turned out quite simply after the hardening method. There was a decent handful.

  • The granules after the first scroll were pretty good, and after the second they were generally excellent, with dense "worms".

  • And what kind of aromatherapy was there !!! Deep fermentation has begun. At the same time, the aroma slowly changed to a thicker enveloping warm floral-fruity with delicate sweet woody notes and some kind of velvety!
  • After three hours of fermentation, I roasted the granules at T = 150 * C for 15 minutes and dried them in a dryer at 60 * C until a characteristic rustling. It should be noted that the aroma did not go away, but only diminished.

  • The granules remained firm. I poured it into a bag for drying and hung it in the gazebo. Went around the bag for two days just for aromatherapy! The scent slowly changed and did not go away. On the third day, mixed with dried petals and flowers of Ivan-tea, peony, chamomile, cornflowers, geranium and lavender. I could not resist and brewed it. The aroma was amazing and the taste was fabulous! It feels at first
  • a clear tea-floral aroma with hints of currant and raspberry. Further, this aroma turns into a deep and sweetish velvety floral-fruity with clear notes of lavender, almond and white flowers, but clearly the tea flavor remains. And finally, a slightly woody tart-sweet floral-raspberry aroma with a slight bitterness appears, which lasts longer than an hour. And this is the aroma and taste of tea without dry fermentation !!!

  • Without a doubt, the addition of hardened alder leaves gives exactly the tea-flower aroma to the tea. Moreover, tea is expensive, elite, long aging, with an awesome long and aromatic aftertaste.
