Mackerel marinated in mayonnaise

Ingredients

Mackerel, fresh frozen 2 medium
Onion 2-3 heads
Vegetable oil 40-50 gr
Salt 1 level tablespoon
Mayonnaise (preferably homemade) 4-5 tablespoons
Peppercorns 5-6 pieces or to taste
Bay leaf 2-3 pieces or to taste

Cooking method

  • Defrost mackerel, peel, separate the head. Rinse well, cut into 3-5 cm pieces. Cut the onion into half rings, put in a bowl, mix with salt, pepper, lavrushka, mayonnaise and butter. Mix well. Put mackerel in this mixture. Put under a press (I cover with a plate, I put a three liter jar of water on top), leave on the table for 1 hour. Remove the press, leave for another 3-4 hours in the refrigerator (I put it in a jar and leave it overnight). Everything, you can eat.

MACKER (Atlantic, Japanese, Indian) - sea fish. Length 20-45 cm (can reach 50-60 cm), weight 250 g (sometimes 500 g - 1.5 kg). The body is elongated, fusiform; the caudal peduncle is thin, laterally compressed. A distinctive feature of mackerel is the presence of small fins behind the second dorsal and anal fins. The back is greenish-blue with a steel sheen, the sides are silvery-copper, the abdomen is silvery-white; there are vertical broken dark stripes on the back and sides above. Inhabits the Black, Azov, Baltic, Barents, White and Japanese seas. Valuable commercial fish. Ice cream, hot and cold smoked, in the form of balyk and canned food (in broth, oil, etc.) goes on sale; in small quantities they produce salted mackerel, preserves from mackerel in various sauces and fillings in small packaging.

Mackerel meat is tender, without small bones, with a slight sour taste, contains up to 19% protein, up to 13% fat, rich in potassium, phosphorus, iron salts and vitamins A, D, Bi, B2, B12, PP. Fresh mackerel is best used for fried and stewed dishes. The broth has an unpleasant sour taste. You can simmer mackerel in a spicy broth (see article Horse mackerel).
