Tkemali from honeysuckle

Ingredients

Honeysuckle 400 g
Water 150-200 ml
Salt 1/4 Art. l.
Sugar 3 tsp
Fresh dill and cilantro on a small beam
Spices (composition - allspice + cinnamon + mint + oregano) 1/4 tsp
Hmeli-suneli 1/4 tsp
Garlic 1 middle prong
Chilli 1 cm without seeds
Wine red strong vinegar 1 tbsp. l.

Cooking method

  • Everything is very simple and quick to prepare.
  • We punch the washed and dried honeysuckle together with water, garlic, chili pepper and clean herbs with a knife from a blender, put in a saucepan on the fire.
  • When it comes to a boil, add spices, salt-sugar and simmer over low heat for five minutes. If there is foam, remove it. I did not have.
  • Then add wine vinegar and taste. Season to your liking. There is one point here - you need the small amount that you try, try to cool it down, then you will understand the real taste of the sauce. I would suggest for this in advance in a plastic bag put a tablespoon in the freezer, or even better, a thick metal spoon for ice cream, and collect the sauce for the sample.
  • Allow to boil, boil for a couple of minutes and pour into prepared hot sterile jars, close with sterile screw caps, turn over, check for leaks, and wrap until completely cooled. I will keep it in the refrigerator. But from experience I will say that such sauces are normally stored in a room in a cool place.
  • With so many spices, the sauce is not very hot. Adjust to your taste. You can also add a pinch of nutmeg.

I am experimenting with the harvest I have. I collected some honeysuckle, I wanted to try to cook a lot of it. Here, in addition to the tincture and just freezing, I allocated 400 g for the sauce. I regretted that it was so little. The sauce turned out to be excellent - spicy, interesting, unbroken, very rich, I would say that it is directly refined. Especially suitable for wild meat, duck and turkey. And we tried it with a simple kebab!
In Thermomix, such things are generally prepared for one or two.

It turned out 2 and 3/4 jars of 0.5. She turned it over, for fidelity, and put it in the refrigerator, having previously left it to eat.
