Ingredients

egg yolk 2 pcs.
granulated sugar 0.5KG
kefir 0,5 l
vegetable oil 4 tbsp. l.
soda, slaked vinegar 2-3 tsp
flour 1 kg

Cooking method

  • Mix the ingredients, until soda - pour soda into a glass and pour vinegar (any suitable), the reaction of the rise of the foam should be 2/3 cup, if the soda does not foam well, it is better to change the soda). Pour the foamed soda into the mixture and knead the dough with flour. There is no need to hold and stand the dough! Then we shape the gingerbread cookies - I do it this way - I put a bowl of water next to it and measure out the dough with a spoon, forming a ball. I spread it on a baking sheet covered with a silicone mat. From this amount of dough, about 55-65 pieces are obtained. Bake for 10 minutes at 180-200 degrees.
  • Beat the remaining 2 proteins (or simply mix) with 100 g of powdered sugar. Cover the finished gingerbread with this glaze.

I've been doing a whole investigation here on these gingerbread cookies: it turns out that soda can fizzle out from time to time and does not work as much as fresh ... otherwise there was a puncture ..- opened a fresh pack and put it as always ... and it stinks and is yellowish has and in general it turned out badly ... but thanks to the forum, all by common efforts learned the essence.
My recipe is similar, only there is more flour (the recipe was taken on the website by my mother in Olya's kitchen) and everything is the same there, only soda 2 tsp of soda and flour 6 tbsp. until soft dough
I do the glaze like this: I beat one protein and add a bag of purchased glaze or powder at the rate of 1: 2, and a little lemon ... delicious. Lot. Not very fatty and high in calories. It's delicious with tea. The kids love them.
