Ingredients

For the test:
Butter (spread or margarine) 175 g
Flour 280 gr.
Sugar 120 g
Cocoa powder 4 tbsp. l.
Baking powder 1 tsp
Salt 1/4 tsp
Egg yolks
For filling:
Sugar 170 g
Corn starch (I have Garnets) 3 tbsp. l.
Egg whites C-0 4 things.
Fresh or frozen berries (I have cherries and gooseberries) 400 gr.
Sour cream 25-30% 700 gr.

Cooking method

  • Dough:
  • Put flour, cocoa, sugar, salt and baking powder in a blender bowl.
  • Add cold chopped butter.
  • Chop into crumbs in a blender with a knife or just a knife.

  • We knead the dough by hand quickly. If the dough crumbles, then you can add egg yolks one by one, which will remain from the filling. I kneaded perfectly and I did not add, although they all go in the original recipe. The quality of the dough without yolks did not suffer.
  • Divide the resulting dough in half, put it in cellophane and send it to the freezer for 20 minutes.

  • Lubricate the mold (large with high sides) with non-stick grease. Preheat the oven to 180 degrees. Defrost the berries (if frozen) and strain off the juice.
  • We take out one part of the dough from the freezer and three on a coarse grater into a mold. We press a little. We bake for 8-10 minutes.

  • Mix the sour cream well with a whisk with sugar and starch.
  • Beat the whites until soft peaks.

  • Place the berries on the sour cream layer. If the berries are very juicy, then sprinkle a spoonful of starch through a sieve on top.

  • We bake the cake for 45 minutes. We check the splinter so that the lower and upper cakes are completely ready. The middle should be wet. Do not bake, there will be a different taste. Turn off the oven and let the cake stand for another 30 minutes with the door slightly open.
  • Then take out, cool in the form. Then put in the refrigerator for 2-3 hours to ripen.

Note

Just a magic cake. A delicate, mousse-souffle layer of filling between layers of rich chocolate, butter and crunchy dough with a bright berry taste is just an explosion of taste! However, next time I will use fresh cherries, preferably peaches or apricots.
The soft layer of sour cream filling is just as delicious as soufflé or mousse.
