Ingredients

Butter 120 g
Sugar 150 gr.
Salt pinch
Chicken eggs 3 pcs.
Wheat flour 300 gr.
Baking powder 1.5 tsp.
Kefir (yogurt) 160 g
Odorless vegetable oil 50 gr.
Cognac (liqueur) 1 tbsp. l. (optional)
Black currant 1 glass
Vanilla sugar 20 gr.

Cooking method

  • All cupcake products should be at room temperature.
  • Beat soft butter with sugar, vanilla sugar and salt until fluffy and whitening

  • If desired, pour in cognac at the same stage.
  • Then we beat in the eggs one by one and beat well after adding each egg.

  • Sift flour with baking powder. We turn on the oven and heat it up to a temperature of 170-180 degrees.
  • Then we alternately introduce into the dough: a third of the flour - mixed - kefir (in my case, homemade yogurt) - mixed - another third of the flour - mixed - vegetable oil - the last third of the flour.
  • After that, add the washed and dried currants with a small amount of flour to the finished dough and mix gently.

  • We spread the dough into tins for 3/4 of their height

  • We bake at a temperature of 170 degrees 25 - 35 minutes until a dry skewer (my oven took 35 minutes, but note: your business can go much faster, so be careful not to burn or dry out))

  • and ... we absorb :))) well, or decorate at our own will (in my case, the cupcakes are decorated with protein custard, but without the cream they are also very, very tasty)
