Note

I bring to your attention a variant of the Ossetian pie or khychin.
Believe me, it's delicious
And not only in the heat of the heat, but also the next day. If you heat it up a little in the microwave.
You can grease with yolk on top and sprinkle with sesame seeds.

And I'm taking this one! Tasty and healthy!
I love bread, biscuits, and waffles with c / z flour!

mamusi,

I don't understand. The dough recipe is shown twice - and, apparently, no one baked it.
Because I mixed 230 g of flour and 300 ml of kefir, mixed with a spoon - and got a pancake-like dough. It will never accept such a density as to interfere with it with your hand and then, after lifting, roll it into a circle 1 cm thick.
Here Admin what he writes about the amount of liquid in the dough:
"Wheat bread from wallpaper, premium, first and second grade. (...)
Mass fraction of moisture 42-45% + 14.5%, flour moisture = 56.5-59.5%
This means that for 1000 grams of rye (here she was mistaken, it is necessary - "wheat") you need to take about 565-595 ml of flour. liquids.
For 500 grams of flour, approximately (500 x 56.5-59.5%) 283-298 ml will be required. liquid. "

500 grams, not 230.
What did I do wrong?
Podmosvichka
TATbRHA, Tan, looked at my notebook, where I duplicate recipes.
No, I wrote everything correctly, no mistakes.
I recently made a flatbread with onions. The dough is not liquid like pancakes
I mold it with my hands and everything works out fine.
Maybe your flour is drier and lighter than mine?
Honestly, I don’t know what’s the matter. I will do - I will make a detailed MK.
TATbRHA
Well, I got out of the situation: I poured half of the dough into a silicone mold, poured and flattened the filling, poured the rest of the dough. Comes over there.
Good thing daboutI am alone and all this will not reach the Ossetians.Otherwise, in the fraternal republic there would have been a general death of the people from laughter, and laughing at me, they would have demanded to themselves for an exemplary punishment and then training ...
Podmosvichka
Why is it really so
We don't have khychin, but pie
We are entitled to options
TATbRHA
Moreover, the Ossetians - and at all junior brothers ... not yet mature enough to lift a paw on a Russian woman ...
Podmosvichka
What am I talking about
Accomplishment
Quote: Podmoskvichka
drier and lighter flour
This flour would have given a thicker dough!
Podmosvichka
I don’t argue, maybe.
I'm not a magician while I'm just learning
