Ingredients

Peony flower petals of any color 400 g
Sugar 800 g
Water 300-400 ml
Hibiscus tea (possibly rosehip tea bags) 2 tbsp. l.
Lemon juice 2 tbsp. l.
Lemon zest optional 1 tsp

Cooking method

  • In the absence of roses, I tried to cook jam from my favorite peonies. Now I will always cook - the exclusive of pure water turned out. Not only is this jam healthy, but also very tasty - tart, the taste is exquisite with a slight bitterness. I generally keep quiet about the aroma!
  • Tear off the petals and sort out from insects. I didn’t wash, I had them clean after the rain.

  • Then rub lightly with your hands so that they fit better in the pan. Casserole 3.5 l.
  • Pour water into a saucepan and bring to a boil, throw a couple of tablespoons of dried hibiscus petals into it - hibiscus tea or a couple of tea bags with rosehip tea. Boil for a minute and gradually add all the sugar and, stirring constantly, bring until the sugar is completely dissolved over low heat.
  • Peony petal jam
  • Then add all the petals in portions, they may not fit right away. As the petals settle into the syrup, add the rest.
  • Let's mix. Bring to a boil over low heat and boil for 5 minutes.
  • Set aside the pan from heat and let the petals soak in the syrup until cooled.

  • You can cook the jam the next day.
  • Bring the jam to a boil over low heat again, add the zest and lemon juice and cook until tender. This took about 10 minutes of vigorous, but not very strong boiling. There was no foam.
  • If your sugar is foamy, it will need to be skimmed off.
  • Meanwhile, we are preparing jars and lids. We sterilize them in a way convenient for you and put boiling jam in them, seal them hermetically, turn them gently, check if the jars are leaking.
  • Then we wrap each one individually in two layers of newspaper and put it under the pillow or blankets upside down, where we keep them until they cool completely.
  • I plan to keep this jam in the fridge since it was the first time I cooked it. I will leave one jar at room temperature to see how it will be stored.

With a maniac desire, I walked around the pan and tried either syrup or chewed elastic fragrant petals. I just couldn't tear myself away. My husband also appreciated it, but it was syrup.
By the way, the petals remained elastic. Much firmer than rose jam. So, you may only like the syrup, which is aromatic and has pronounced healing properties.
The syrup in the saucepan was not thick, but fluid. May freeze in the refrigerator. Maybe during the cooking process someone will want to add some water, since all the cimus is in the syrup.
In winter I will open and unsubscribe.
The color intensity of the jam depends on the color of the flowers. I have mostly pink here, so I advise adding hibiscus if you cook from light ones. You can just cook light white, it will also turn out beautifully - it can be used in cocktails. For this option, I added a couple of tablespoons of mashed honeysuckle berries for color. It turned out to be even healthier.
Peony is a very beautiful and healing plant. In official medicine, drugs based on peony roots are mainly used.
While the flowers of the plant also have healing properties - from petals to seeds.
I will not list the diseases in which the patient's condition can be alleviated - there is a lot of information on this on the Internet.
I personally insist on petals on alcohol, sometimes with white lily petals and use them to gargle, treat cuts, apply the petals to inflammatory skin elements.I make water tinctures for washing. I use the syrup for colds and sore throat, for colic and tachycardia, exacerbation of osteochondrosis. I noticed that it helps to relieve dry cough, possibly due to a slight sedative effect. Lowers blood pressure a little.

To get started, use no more than 1 tbsp. l. spoons at a time and do not give to small children under 14. PREGNANT WOMEN DO NOT USE!
In general, any jam should not be consumed half a can at a time! :))
I went to cook in a different way, I want to achieve the softness of the petals.

I found a recipe, I want to try it.
The following ingredients are taken in equal parts: rose; peony petals; lily white; chamomile; peppermint; linden flowers. The resulting mixture is poured with 500 ml of boiling water and infused for at least an hour, and then filtered, mixed with 50 ml of red wine. The resulting product is placed in a dark and always cool place. This lotion is used to wipe the face three times a day for 10 days. Then you need to take a seven-day break, after which the course can be continued if necessary.

My grandmother, a herbalist, I remember exactly, healed bleeding, almost all women's diseases with tinctures of peony roots and leaves, and she herself drank decoctions to thin the blood, as she said.
