  • Based on Elena's recipe kubanochka, and hot on the heels of the sage fever that happened to me recently, such an extraordinary gull was born, the recipe for which I share with you, friends!
  • This type of teas are not made daily or even monthly, therefore, without blushing too much, I will give it an immodest name:
  • "Pink dance"
  • So, everything is in order.
  • Somehow I came across on abandoned summer cottages on the bushes of a wild, or whatever I don’t know, roses! Well, the hands are grabbing, the head is stuffed with teas. The natural state at that time was to pick scarlet flowers, for tea, exotic, not overseas, my own dear. That was done under the tedious itching of clouds of mosquitoes and midges over my mortal body. I typed a little, it turned out 200g,
  • So I run through the fields and think. But how can I turn these gramules into tea? After all, such an amount is enough only to hammer the auger of a meat grinder ... And then it dawned on me - we had to look for related leaves that would be combined with the aromas of a rose and obviously did not interrupt it. I had such, apple trees, which gave a delicate apple aroma with an almost ephemeral sourness during the hardening method according to Zachariy!
  • And I decided on this dubious experiment with a mix. It turned out about 3: 1 of apple leaves and rose petals, previously also frozen. I emphasize that the ratio is approximate, well, it is impossible to compare exactly a dense bunch of petals with fluffy leaves. Look at the photo for yourself)))

  • But in the process of freezing in the fridge freezer and then defrosting them, they lose their charm. The scent remains the same! The petals were passed through freezing / thawing at one time, this is how they looked after bullying themselves)

  • Further, more interesting! After talking with you, friends, I realized that many do not see the point in shaking over this delicate product. I heeded the instructions and went along the beaten path of rolling and subsequent fermentation of the resulting raw material.
  • I scrolled it, while the meat grinder was chewing the apple leaves tightly, apparently I dried it a lot by freezing it three times, defrosting it and putting it out to dry from condensation before twisting it.
  • A third of the work is done, then the twisted one went to fermentation. This time I did not hold a cup with a mass on the balcony for a long time, the temperature was too high, as much as 29 degrees Celsius! At home it was calmer and cooler. Also, the cloth was constantly wetted under the lid, and the heating of the plastic dish was also checked by touch. The room was filled with a light scent of roses with a touch of small notes of prunes or walnut. Well, this is my feeling of course! There were no heavy herbaceous smells, which in the beginning I got from purely leafy mixes.
  • An average of two hours passed. I do not forget that the fermentation starts every time you defrost in the heat during hardening (freeze / thaw). And I allow the foliage to defrost for an unforgivable time, 3-4 hours, until the foliage in the bags (!) Fully accepts the ambient temperature and then for another hour, one and a half on top. And every time I smell the fermenting leaves.
  • Here I am an individual, I do not do everything according to accepted standards)))
  • But now the most important thing is that you can throw your slippers on me, but I will endure it, because my experiment REDUCE, although I did the following operations with great hesitation, one might even say I risked precious raw materials. We read and wonder)))
  • After starting re-spinning before drying on a finer grid, disappointment came. There will be no granules, an absolutely non-forming mass poured from the grate. It pissed me off a little, to be honest, well, I want to get granules and that's it! Having scratched what is called the back of the head, I took a cup of 80-100 grams, a tea cup, collected water purified through a filter, and ... poured the mass! Then he mixed it well with his hand until smooth. I left it for 5-7 minutes. And only after that, I achieved real granules! I put this case on a baking sheet and in an oven preheated for 200g! The door must be ajar. After 20-30 minutes, the familiar aroma of rose petals was already floating around the apartment, a little later gradually replaced by the familiar notes of prunes or dried fruits.
  • I have been focusing on this particular smell lately. It's more convenient for me. As soon as I start to feel this smell, I lower the temperature to a lower one, this time it was about 120 degrees, after another 10-15 minutes and another stirring of the granules, I understand that it is time to bring the temperature regime to a minimum, followed by turning off the oven. The last stirring and final drying in a cooling oven, after which the already dry tea smoothly moves into a fabric bag for dry pre-fermentation. Curtain!
  • Oh yes, the photo of the granules must be shown! There is practically no dust fraction! Only large granules and their particles.
