Cooking method

  • The classic pound cake, according to Wikipedia, is traditionally made from flour, butter, eggs and sugar, and gets its name precisely because each of these four main ingredients was originally taken in the amount of one pound. Now any cake made with a ratio of 1: 1: 1: 1, by weight, from flour, butter, eggs and sugar is also called pound cake, regardless of size. The main four ingredients in pound cakes are often added with additional ones: milk, cream, baking powder, rum (cognac), cocoa (chocolate), berries (dried fruit). The shape of the cake can also be different - both in the form of a classic "brick" and in the form of Bundt cake.
  • The shape of our cupcake can be easily attributed to the Bundt forms.
  • Well, since my cupcake is from the "express" category, I rubbed, beat, kneaded everything quickly and without using any equipment, just with a silicone spoon-spatula and a little whisk for smoothness.
  • Beat the softened butter with sugar, salt and vanilla extract (you can replace 1 teaspoon of cognac (rum) + vanillin) until fluffy, continuing to beat, add eggs one by one. Beat until smooth.

  • At this stage, you can already turn on the cupcake for heating.
  • Add flour sifted with baking powder and starch to the oil mixture, mix. Add milk and stir quickly until smooth.
  • The cupcake is warmed up, turn it off while spreading the dough. (* thanks to Tatiana win-tat for this advice! The bottom of the cake really does come out with a tender crust.)
  • After laying out the dough, turn on the cupcake, after 1-2 minutes turn it over (usually during this time the cupcake goes into mode, which will be signaled to us by a green light). Bake upside down for 12 minutes. Turn over, check readiness with a toothpick.
  • Since the cake contains a fairly large amount of sugar, it can be slightly fried along the inner bottom edge of the hole, but these crusts are easy to remove and the appearance and taste of our cake will not be affected at all!

Ludmila, yes, that's for sure !! As it happened with me today - the Stolichny stove was assembled from Tatiana-win-tat and found that the raisins were out. But I remembered that I had never tried to bake this pound cake in a cupcake! It was necessary to urgently correct this omission - the cake is delicious! And once again I was convinced that it tastes the same as baked in the oven (it was baked in Nordics as well), and how quickly it bakes in a baby cake maker is just a miracle!

And I also make it without a mixer ... it's even strange, here there are not many eggs, in principle - only 2 ... Somewhere here in the recipes I read that the connecting film of the yolk sometimes gives such a distinct egg taste, maybe it that case ...
