Khan-pilaf with meatballs - all ingenious is simple

Ingredients

For the meatballs:
Chilled minced meat (I have pork + beef) 500 gr.
Bulb onions 1 PC.
Odorless vegetable oil for roasting
Flour for crumbling
Salt, sugar, spices, herbs taste
For the dough basket:
Odorless vegetable oil 3 tbsp. l.
Flour 300 gr.
Coarse sea salt 1/2 tsp b / g
Butter at room temperature 60 gr.
Bacon or brisket about 300-400 gr.
Boiling water is steep 300 ml.
For pilaf:
Bulb onions 1 large head
Carrot 1 large piece
Saffron (marigold) or turmeric 1/2 tsp
Odorless vegetable oil for frying
Salt, sugar, spices, herbs taste
Rice (dry) 400 gr.
Boiling water

Cooking method

  • Khan-pilaf with meatballs - all ingenious is simpleMix the minced meat with finely chopped onions, add salt and sugar, pepper, plus a little greens. Now beat back well. This is very important and necessary. I do this by putting a large bowl in the sink. And I throw a piece of minced meat on this bowl. I beat it until, like butter dough, the minced meat can be collected from the bowl with one hand, and the bowl remains clean.
  • Khan-pilaf with meatballs - all ingenious is simpleShape the meatballs with a tablespoon or, like me, with a meatball maker.
  • Khan-pilaf with meatballs - all ingenious is simple Dip the meatballs in flour and place in the freezer for 30 minutes. Not more.
  • Khan-pilaf with meatballs - all ingenious is simpleNow we need to cook rice. I have a mixture of jasmine and brown rice. It's not on purpose, it's just that Jasmine is over)))
  • Khan-pilaf with meatballs - all ingenious is simpleRice must be rinsed 6 times with cool water. Then pour boiling water over three times the volume of rice. Salt well and add turmeric or saffron. I cooked in a slow cooker. I put the program on Steam. Didn't cover the lid. Brought to a boil and, stirring, boiled for 10 minutes. But it's better not to be guided for a while. The rice should be cooked on the outside, but crispy and starchy on the inside. Just do not digest! Then put the rice on a sieve, rinse.
  • Khan-pilaf with meatballs - all ingenious is simpleKhan-pilaf with meatballs - all ingenious is simpleKhan-pilaf with meatballs - all ingenious is simple
  • Khan-pilaf with meatballs - all ingenious is simpleFry the meatballs in vegetable oil in a preheated multicooker bowl or in a pizza maker, in a frying pan. Take out. Do not wash the pan / bowl.
  • Khan-pilaf with meatballs - all ingenious is simpleNow let's knead the dough. This is done very easily. So easy that I didn't even turn on the combine. The dough was easily kneaded by hand. Mix very hot water with vegetable oil and pour into salted flour, stir with a spoon until the dough cools down a little, then knead the dough with your hand. Now you need to let him rest on the table for about 20 minutes.
  • Khan-pilaf with meatballs - all ingenious is simpleWe chop large carrots and onions. Fry in the same place where the meatballs were fried, add more oil. Fry the onions until transparent.
  • Khan-pilaf with meatballs - all ingenious is simpleDivide the dough into two parts. First, we roll / stretch one circle with a diameter of 24-25 cm on a silicone mat. Bending the rug in diameter, cut the circle into 8 segments.
  • Khan-pilaf with meatballs - all ingenious is simpleNow we will bake our pilaf. This can be done in the oven in a cauldron. Or a frying pan with high sides. I baked again in a slow cooker. Grease the bowl / cauldron well with oil.
  • Khan-pilaf with meatballs - all ingenious is simpleWe put the segments of the circle made of dough close to each other on the bowl, up and down the principle. If the length is not enough, then carefully stretch the dough. We grab the segments with our fingers. The dough is plastic and stretches well. We cling the edges to the edge of the bowl. It's hard to describe, but I think it's clear from the photo. I have a Oursson MP5005 pressure cooker. The diameter of the bowl is 26 cm. Then we roll it out, fold it and divide the second circle from the remaining dough. As a result, I used both circles of the test, except for three segments. They will then lie on top.
  • Khan-pilaf with meatballs - all ingenious is simpleCut the raw smoked brisket thinly. Slicers won't work. May burn. Better a sharp knife and slightly frozen brisket. Let's weave a mat. Put it on the bottom of the bowl.
  • Khan-pilaf with meatballs - all ingenious is simpleSpread 2/3 of the boiled rice over the bottom and sides of the bowl. Season with salt and pepper.
  • Khan-pilaf with meatballs - all ingenious is simpleLay out the meatballs and distribute the vegetables between them. A little more salt, spices and herbs. Pour the juice and oil from frying on top of the meatballs and vegetables.
  • Khan-pilaf with meatballs - all ingenious is simpleCover with the remaining rice. Then add the pieces of butter.
  • Khan-pilaf with meatballs - all ingenious is simpleSmell the pilaf with hanging dough pieces plus the remaining pieces. Crumble a little butter on top. Cover the multicooker with a lid. Baking mode for 1 hour.
  • Khan-pilaf with meatballs - all ingenious is simpleAt the end of the mode, remove the cover. Cover with anti-sprinkler or nothing at all and set for another hour. The end of baking is when the top is completely baked (when baking in a multicooker, it will remain light, unfortunately), and the walls are golden.
  • Khan-pilaf with meatballs - all ingenious is simpleI really wanted to gold the top. My husband unscrewed the knobs and I, wrapping the edges of the bowl with foil, put the pilaf under the grill for 5-10 minutes. However, this turned out to be superfluous - the pilaf turned over and the bottom turned out to be the main one.
  • Let the pilaf stand for a while and turn it over onto a platter. Do this very carefully as there may be hot oil inside!
  • Serve hot, but also very tasty when warmed up! Served like this - each one has a piece of crispy flatbread, pilaf with meatballs and a piece of fragrant fried bacon on a plate.
  • Khan-pilaf with meatballs - all ingenious is simple

Note

If you cook in the oven, then under a lid / foil at T 200C for 30-40 minutes, then remove the lid and cook for another 20-30 minutes.
The recipe came from Seagull from Cooking. RU. I just finalized and adapted it for a multicooker. Thanks a lot to the author!
I do it a second time. The first time I didn't have time to photograph. It was so delicious that she ate the whole crust herself. It's delicious, it's beautiful, it's unusual. And the products are the most common. But the crust, mm-mm-mm, the caramel bacon is straight, the pilaf is crumbly and fragrant.

everywhere is good. in the oven it will be faster) everywhere delicious I just had the oven busy))) The main thing is to choose a good shape, so that the bottom is not very large and the sides are not too high.

Ilmira, and at what level and how long? I really wanted to repeat it.))
Ilmirushka
LudMila, oh, Lyuda ... well, I’m such a muddlehead, I don’t remember and didn’t write it down anywhere. If we proceed from Irishka's recipe, then the mode I have is "oven", and the time, most likely, was set automatically. Perhaps I then looked at the degree of readiness and added a few minutes (10) on the airfryer program.
Ilmirushka
So Irishkin never saw my pilaf
