Chocolate muffin with beetroot

Ingredients

Bitter chocolate 90% 100 g
Puréed raw beets 200-230 g.
Honey 100 g
Unrefined coconut oil 150 g
Eggs C0 3 pcs.
Unrefined cane sugar 100 g
Lime small 1 PC.
Flour 200 BC
Cocoa 3 tbsp. l.
Baking powder 2 tsp
Salt 1/4 tsp

Cooking method

  • Grate the peeled raw beets on a grater / purée tool. If it lets out a lot of juice, drain without squeezing.
  • Melt the chocolate in a water bath. I smelled some coconut oil just on the stove with minimal heating: the bottom of the dishes was just perceptibly warm, not hot.
  • Mix liquid ingredients: beetroot puree, honey, butter, lime juice, melted and slightly cooled chocolate; add the grated lime zest.

  • Add the dry mixture (flour, cocoa, baking powder, salt) in 2-3 doses into the liquid mixture.

  • Eggs beaten with sugar until firm foam in 2 stages, gently insert into the dough.

  • Pour the dough into a greased form.
  • Chocolate muffin with beetroot
  • Bake for 45-50 minutes at 160-165 gr. C in the center of the oven in top-bottom mode.
  • Willingness to check with a wooden skewer in the center.
  • Remove from the mold very carefully after cooling completely.
  • You can use any buttercream or ice cream scoop for decoration and serving.
  • I covered the top of the cake with a cream of mascarpone (100 g: 150 g), whipped with condensed milk.

Inna, no, no smell or taste is felt. If you take very dark chocolate, add other flavors: lime or lemon zest, vanilla, aromatic alcohol, etc., then they completely hide the beets.
