Cooking method

  • These envelopes can be either an independent dish, for example, for breakfast, or a hot snack, or an addition to broth instead of pies. They are made quickly, which makes them attractive for everyday cooking.
  • So, we proceed from what we have in stock. I had a small bag of boiled frozen chanterelles, which I cut into smaller pieces, fried in a little vegetable oil, at the end I added a couple of tablespoons of sour cream, warmed it up a bit, and set it aside to cool.
  • I rubbed the cheese on a coarse grater.
  • Thin Armenian lavash was cut into 8 squares.
  • Lavash envelopes with mushrooms
  • I divided the filling (mushrooms and cheese, I mixed them for convenience) into 8 portions, each wrapped in a square of pita bread with an envelope.
  • Preheated a frying pan over medium heat and lightly fried it under the lid in a little vegetable oil until lightly browned. It is not necessary to deeply fry, otherwise the pita will become tough.
  • Best served warm. If you plan to leave some of the envelopes the next day, then it is better not to wrap them for future use, but to store the filling and pita bread separately in the refrigerator. Otherwise, the filling may soak the cake and break it. If the lavash has dried up and become hard and brittle, soak it in cold water and it will become elastic again.

And I do it under the lid so that the moisture condenses there.But you will probably have a frying pan with you, so you can try both options.
