Ingredients

Pumpkin (I have frozen) 400-500 gr.
Cream 32% fat 500 gr.
Egg yolks 3 pcs.
Egg 1 PC.
White sugar 50-100 gr.
Vanillin
Cinnamon
Brown sugar for sprinkling

Cooking method

  • Pumpkin crème bruleePrepare pumpkin puree in any convenient way. I cooked in the microwave from frozen pumpkin. After cooking, rub the puree through a sieve to achieve a homogeneous consistency, but if the small pieces of pumpkin in the dessert do not confuse you, then you do not need to rub it. For a cream recipe, we need 200 gr. ready-made puree. Cool until warm.
  • Pumpkin crème bruleeCombine pumpkin with sugar, yolks and eggs. Beat well with a blender or mixer.
  • Pumpkin crème bruleeTo prepare the milk base, combine the cream, vanillin and cinnamon. Heat and, stirring constantly, bring to a boil.
  • Pumpkin crème bruleeThen pour the cream in a thin stream into the pumpkin-egg mixture. Beat well again.
  • Pumpkin crème bruleeFurther, it is recommended to strain the mixture so that the consistency of the cream is softer. I didn't. Since the pumpkin particles do not scare me. Pour the mass into molds. From the specified amount, three 200 ml molds are obtained.
  • Pumpkin crème bruleeWe prepare the cream in the oven at a temperature of 150 degrees for 1 hour in a bowl where water is poured so that the molds stand in it up to the waist. I cooked in the Oursson MP5005 multicooker pressure cooker, pressure 3 on the "Your Choice" program at a temperature of 150 degrees for 30 minutes + time for the pressure drop.
  • Pumpkin crème bruleeThen cool the cream and let it mature in the refrigerator for at least 2 hours. I stood all night. In the morning, sprinkled with brown sugar and baked under the grill. Served for breakfast with aromatic cinnamon toast.
