Ingredients

Wheat flour 200 g
Baking powder 5 g
Eggs 3 pcs.
Milk 100 ml
Vegetable oil 100 ml
Hard cheese 100 g
Dried (dried) tomatoes 100-200 g
Dried Italian Herbs taste
Salt and ground pepper to taste, if necessary
Pumpkin seeds for decoration handful

Cooking method

  • Hard cheese (in the original Gruyere, I had Argentinean Parmesan, but I baked it repeatedly with a variety of cheese - everything fits) rub on a coarse grater, add flour and baking powder. Season lightly with freshly ground pepper. Add salt carefully, as your sun-dried or dried tomatoes and cheese may be quite salty. You can refuse it altogether. Add some (to taste) dried Italian herbs. Mix all dry ingredients well.
  • If you have loose dried tomatoes, soak them in boiling water for an hour beforehand to soften them and release excess salt. Drain the water, lightly dry and cut into large random pieces (I cut the halves of the tomatoes in strips into 4 parts).
  • If your tomatoes are sun-dried in vegetable oil, first let the oil drain (you can add it to the total amount of oil from the recipe), and also chop coarsely.
  • Mix eggs, milk and vegetable oil (I have olive oil, but you can take any refined one) with a fork or whisk until smooth.
  • Combine dry and liquid ingredients in one bowl, stir until smooth (but not too zealous). Lastly, put the tomatoes in the dough and stir so that they are evenly distributed.
  • It is best to line the cake pan with good baking paper. Since we have a lot of cheese in the composition, it can stick.
  • Spread the dough in an even layer in a mold, sprinkle with pumpkin seeds on top and press lightly into the dough for a better hold.
  • Bake in an oven preheated to 170 degrees for 25-30 minutes until a dry speck.
  • Let the finished cake stand for 10 minutes in the form, carefully remove.
  • You can serve both warm and cold, but keep in mind that the next day, the cake is only gaining in flavor. Therefore, it is very convenient to prepare it the day before for a snack table or for a picnic.

I want to emphasize that the cake is perfect for a picnic. To its taste, it is quite a full-fledged dish, hearty and spicy. And it is very convenient: you can do it in advance, does not crumble, is beautiful when served. Although you can not decorate it with anything on top, the crust comes out quite presentable due to the large amount of cheese.

Instead of large sun-dried or dried tomatoes, you can take dried small bell peppers and tomatoes, which are sold by weight in our Auchan. It turns out no worse, and even more delicate than with dried in the sun or in the oven, because they do not contain salt. Small pieces of these dried vegetables do not need to be soaked beforehand, they become soaked quickly during cooking. They need to be taken about half a glass by volume, because they are lightweight.

I've been baking such a cake for the last couple of years, when our mushroom season begins, and I take it to the forest for a snack instead of sandwiches for tea or coffee. Well, at home it is a pleasure to have breakfast with such a cupcake!
