Cooking method

  • This is my favorite curd cake. I have baked it more than once in the oven and slow cooker. It turns out very tasty.
  • Lemon curdIn a separate bowl, combine cottage cheese with softened butter, add finely grated zest and lemon juice there.
  • Lemon curdMix all ingredients with a mixer.
  • Lemon curdSift flour with salt and baking powder into this mass.
  • Lemon curdCombine eggs, sugar, vanilla sugar, or almond essence in a separate bowl

  • Lemon curdbeat with a mixer into an airy fluffy mass. Add it to the curd and flour mixture and stir quickly with a spatula.
  • Lemon curdPreheat the oven to 170–180 ° С. Cover a form with a diameter of 20-24 cm with high sides with parchment, brush with butter and lightly dust with flour.
  • Lemon curdTransfer the dough into a mold and flatten. Bake the curd for 40-50 minutes. Check readiness by piercing the pie in the center with a skewer. If the skewer remains clean, the pie is ready. If not, leave it in the oven for another 15 minutes.

I recommend the oven at 160-170 ° C, but longer. It bakes better this way.

Instead of lemon juice, I poured juice-syrup from rhubarb into the dough (rhubarb was covered with sugar in the evening so that it would give liquid) and I took out 2 squirrels for pouring, put the rhubarb itself on the dough, and poured sour cream on top (2 squirrels + 70g sugar beat + 100g. sour cream). Of course, the dough thickened under the rhubarb, but the taste turned out to be awesome, sweet and sour curd treat

Barbara, I had 7 shoots of different thicknesses, I did not weigh. When I cut it quite a lot, it lay on the dough with a small hill, which I leveled, leaving the dough along the edges as if on the sides. I took into account the sugar that I used to fill the rhubarb in the total amount of sugar. And in the dough I reduced the sugar to 170g, in total with what went into rhubarb. I poured 70 remaining grams of the total 240 grams of sugar into the filling.
