Fruit Cookies, Egg-Free, Gluten-Free

Ingredients

Pumpkin or other fruit 1 glass
Sugar 0.5 glass
Vegetable oil 1/4 cup
Soda (slaked with vinegar) 1 tsp
Green buckwheat flour 2-2.5 cups

Cooking method

  • This is our first baby cookie. We lived on it for a long time.
  • Now they have matured and you can try other tastes.
  • Suitable for children, allergy sufferers and vegans.
  • The recipe is mine.
  • Very simple and fast.
  • Fruit puree.
  • It was originally a light baked and mashed pumpkin.
  • Further, wintering in Thailand, I baked on mango puree and papaya puree. Just peeled and whipped with a blender. You can mix. I highly recommend trying these products as well.
  • I also tried it on pear and apple puree. You can either fresh mashed potatoes or baked fruits.
  • But our favorite is mango.
  • I reduced the sugar to a few spoons as usual.
  • The dough easily tolerates freezing. If you suddenly get a couple of mango or papaya, knead the dough and freeze.
  • Add sugar and vinegar slaked soda to the finished puree. Mix.
  • Then add vegetable oil and flour. Knead a soft dough. Let it cling to your fingers a little better than being tight.
  • Roll out the dough, sprinkling with flour with a rolling pin, a little less than 1 cm. Cut out the cookies.
  • Put on a baking sheet covered with parchment and bake at 180'C for 15-20 minutes.
  • Make the dough thicker, the cookies will be softer, roll them out thinner, they will crunch a little. Likewise, bake a little longer, they will be crispy. Pull out earlier - soft.

Interesting cookies, but only green buckwheat will do, or can you use ordinary buckwheat flour? I liked the recipe, thanks

I'm not at all sure about the usual one. Rather, it will not work out exactly. The dough will crumble. Then you need at least protein. Something that will hold it together. Green has a completely different property.
If your diet permits, you can use regular flour. The cookies will be fluffy then.

Irina, it is a pity that the usual does not fit! Then you need to buy the green one. I got interested precisely because of the lack of gluten! Thank you, let's try! You can also test the egg

Irina, and if you poured 2.5 cups of flour, and the dough is not at all for rolling, add more? Or is it better to spread it out with a spoon?

And rye flour will do, I wonder?
