louisa, Louise from cherry plum turns out very tasty tkemali. I canning in the spring. In winter, it can be added to borscht or potato soup. For tkemali, add 1 glass of water for each kg. Boil until the bone is separated. Wipe through a colander. Add crushed garlic. Chop the dill, cilantro and, if present, fennel finely. Add salt, hot red pepper and sugar. Add sugar until it is very sour. You don't need to cook any more. This is the spring version. Stored in the refrigerator for 2-3 weeks. Very tasty with fried young potatoes.

Of course, it was not without gag. The main violation of the recipe - I cooked in a pressure cooker (in Shtebe), but now I cook all the stew in it, I like the result.
The meat was veal, put tarragon less - I was just afraid that there would be a too strong smell. And, by the way, I was frightened in vain, everything turned out harmoniously, fresh, spring-like.
And I didn't find the cherry plum, I replaced it with plums, but they turned out to be sweet. In general, the dish turned out to be sour, but just in moderation, not too much.
It will have to be repeated in the summer, with cherry plum and with my tarragon from the garden. We'll have it all later.
