Ingredients

Cooking method

  • 1) 1 tsp wheat sourdough
  • 15 g flour
  • 15 grams of water
  • For 8 hours at room temp.
  • If the leaven has been in the wither for a long time, repeat the procedure twice.
  • 2) Dough:
  • 30 g sourdough
  • 150 water
  • 150 flour
  • For 10-12 hours at room temperature
  • 3) Dough
  • 300 gr dough
  • 500 gr flour
  • 110 milk
  • 3 eggs
  • 100 grams of sugar (I added 50 more)
  • 80 gr oil drain
  • 10 g salt (slightly less)
  • 100 grams of raisins (I added 50 more, you can still 150 grams of candied fruits)
  • Knead the dough. Leave for 20-30 minutes for autolysis (gluten development). Then knead by hand for 10-15 minutes or with a mixer. Add dried fruits at the end of the batch.
  • The dough is soft and elastic. Put the kneaded dough in a greased bowl, cover with foil, and for 3-5 hours in the oven with the light on (temp 25-28 C). During the proving, stretch and fold the dough every hour.
  • Divide the dough into parts according to the number of forms. Form into balls so that there is tension on top and dried fruits are inside. Fill the form by 1/3. Cover with a film so as not to wind up.
  • Proof for 2-5 hours before doubling. (temp 25-28 С)
  • Baking: 180 -175 C 30-40 minutes until tender.
  • Apply the glaze to the cooled cake.

And the second time I baked pies from this dough and added another 30. That's what you need !!! I will definitely save the recipe, print it to the cake forms, for the future, as they say)))
