Sand baskets with coconut cream Cheap and cheerful

Ingredients

Dough for baskets
flour 300 g
sugar 125 g
egg 1
odorless vegetable oil 120 g
salt 1/5 tsp
baking powder / soda 1 tsp. / 0.5 tsp.
Filler
jam / jam / berries
Cream
finely ground corn flour 3 tbsp. l.
milk 300 g
sugar 60 g
coconut flakes 30 g
salt pinch

Cooking method

  • This recipe was "born" quite by accident - I was just testing a new device - a tart-lady VES electric G-116-N, and selected suitable dough recipes.
  • This dough for baskets is an improvisation on the theme of shortbread dough from Lyudochka Husky, for which many human thanks to her!
  • In addition, I wanted to find a simple cream that can be made quickly.
  • In general, everything was done quickly, without concern for beauty, but ... The result was very good, so much so that I could not help but share with you.
  • Here, I share.
  • Dough.
  • I made mayonnaise from eggs, salt, sugar and vegetable oil (odorless) using a submersible blender. I did not achieve complete dissolution of sugar, because with sugar grains, a crisper dough is obtained.
  • Wheat flour mixed with baking powder was mixed into the resulting mayonnaise.
  • I baked with the help of a tartlet maker the first 2 loads for 7 minutes, the next - 6.
  • It turned out 6 full downloads of 4 things, - these are the baskets:
  • Sand baskets with coconut cream Cheap and cheerful
  • In those that are already filled with something brownish - cranberry coolies. He also made very good friends with this test.
  • By the way, the baskets remain crispy both in the package and in the refrigerator, and for quite a long time.
  • And if the amount of sugar in the dough is reduced to 1 tbsp. spoons, then you get excellent baskets for savory fillings, for example, for pates, salads, etc.
  • Cream.
  • This is generally done swiftly and with minimal means. But the result is great!
  • So,
  • mixed cornmeal with sugar, salt, poured in milk, stirred well and sent to the microwave for 30 seconds. Stirred - once again in the micra. And so 4 times for 30 seconds with intensive stirring between "sessions". It also depends on the power of your micro.
  • In general, you need to brew this mixture in any convenient way.
  • Then I cooled it slightly, mixed in the coconut flakes, and it turned out to be a delicious tender cream.
  • It is frozen well, but I do not think that this cream will perfectly keep its shape and is suitable for decoration, especially since it has a grainy structure thanks to coconut flakes.
  • And as a layer, it will be very good!
  • Gyyy.
  • With the light hand of one of our members of the forum, I now call this cream "Ku-Ko".
  • By the way, I did something similar with rice flour and ground roasted peanuts - also quite good.
  • And now I will call this option "Ri-Ar".
  • There will also be options for "Ku-Ar", "Ri-Ko" and others
  • Moreover, this cream is also quite tasty without coconut and other nuts, you just need a little more flour, otherwise it may be watery.
  • That is, you understand, right? Without any eggs, butter and dancing with tambourines, you can cheaply and cheerfully make a wonderful custard for a cake, roll, cake ... And give this misunderstanding some sonorous name.
  • Here's the fun! And it's delicious!
  • But this is lyrics, we still have to fill the baskets, and I chatted.
  • So,
  • Assembly.
  • A five-minute black currant, rubbed with sugar, was blotted at the bottom of the basket, and filled with cream on top.
  • All!
  • Sand baskets with coconut cream Cheap and cheerful
  • Not pretty? But very tasty!
  • Oh, here's another cutter:
  • Sand baskets with coconut cream Cheap and cheerful
  • The dough crumbles under the knife, but I tried to cut it more or less evenly.

The dish is designed for

24 baskets

Time for preparing:

So interesting! I never thought that baskets with cream, berries, jam could be made so easily! Astonished! Thank you! Must try! Although I don't have such a "thing", I also think it will work in the oven?
But I'll definitely take the cream into service!
Maryka
Olya, thanks! She just took the tartalet from the post office today, on the weekend - a test in the form of these baskets.

Olga VB, Olga, the baskets turned out to be wonderful - creditable, very pretty, homemade! And the signature cream "Cucco" (corn-coconut) impressed me! Thanks for the hearty little baskets! Thanks for the detailed description!

Where to see finely ground corn grits? Something I do not meet her in the shops I visit.

Olya, thanks, but a separate one for the cream!

Olga, thanks. Everything is clear, everything is available. Tartalet girls, really not, but probably you can bake in an old-fashioned way, in tins?
Olga VB
Girls, dear ones, thank you all for the kind words! I was already proud of myself
Quote: Oktyabrinka
how much dough do you need to spread to make such beauties?
The first time I made cakes the size of the bottom of the cell of the tartlet maker and a little less than the middle strip in height. And then she simply divided the entire volume of the dough into 24 parts. It's simple: first on the scales, divide the dough in half, then again in half each half, then again in half. This makes 8 pieces. Each of them must be divided into 3 parts - this can also be done with the help of scales and children, or by eye. It turns out just the ideal size for this lady tart.
By the way, you don't need to lubricate anything. the dough is quite fat, ready-made baskets just jump off themselves later.
Quote: Irina F
Now I'm starting to regret that I refused to buy this baby!
Irisha, the price is small, but the result is credible. Ready-made baskets can be eaten without filling like cookies, and even a child can make them, because dough by hand, without any tools, is also easy and simple.
So I can give you passwords where baby Vesochka can be bought.
I and Unold have, but they are completely different.

Will it work in ordinary tins in the oven? And what is the taste of the basket, similar to the People in butter?
Of course! And in a regular oven, and in the form of cookies, tart, grated pie and so on, so on, in any form and in any way that are applicable for other shortbread dough.
There is only one point: sometimes I deliberately not until the end, not until completely dissolved, I stir the sugar, so that the result is more crisp, because when baked, each sugar crystal turns into a small caramel. If the sugar is dissolved completely, then the result will be a little softer, softer. With butter it turns out a little softer too, because there, not even fully dissolved sugar dissolves itself.
But to say that in addition to the crunch, the taste somehow changes - no
Quote: Guzel62
I also think, will it work in the oven?
Of course!

on weekends - a test in the form of these baskets.
I really hope that everything will turn out well, and you will show us the result here.
I keep my fists!

really liked the cream
In general, I went nuts from the result!
And why did I waste time and money with eggs and butter!
The only pity is that it is not very suitable for decoration, although it is possible to roll balls of the Rapaelok type out of it - why not decoration!
Quote: Svettika
Where to see finely ground corn grits? Something I do not meet her in the shops I visit.
Svetochka, I can't even imagine where she is not!
Just look at the corresponding shelves in the store. Already in the network, then there is always.

Girls, thanks again to everyone who dropped by!
And if you use the recipe for the dough and / or cream, I will be happy!
And you will definitely not regret it.
By the way, Muscovites, now in Auchan (at least in Vegas) coconut flakes are very small - I liked it. It turns out to be more economical, and the coconut taste can be made less obtrusive due to this.

win-tat, Tanyusha, well, just exemplary!
What about ready-made mayonnaise? It's not sweet, with salt, mustard, vinegar ...
How did the dough (baskets) taste like? Did you add sugar to it?
And about the cream, I wonder if you liked it or not?
Have you smacked some sour berry jam-jam to the bottom under the cream?

Olga, Thank you !
The dough turned out superb, I just didn't feel like dividing the egg in half, so I took mayonnaise, I used to make cookies with mayonnaise (yes, everyone probably did it), mustard and vinegar are not felt, and the dough is very fragrant.
Whipped mayonnaise with sugar, did not add salt, because it is in mayonnaise and added flour with baking powder.
And the cream ... yes, I licked the whole bowl after I filled the baskets
Tanyulya
win-tat, well, you youngster! These little baskets are pretty.
Tanya, did you use store mayonnaise instead of butter?

Sand baskets with coconut cream Cheap and cheerful

The dough is wonderful! Only I was just getting ready to make People's baskets, and I had two yolks, so I replaced the egg with them. There was not enough liquid for kneading, because two yolks are 40 grams, and an egg is 60, I sprinkled a little cold water so that the dough would gather. Unfortunately, I do not have such a miracle device for tartlets, ((I had to sculpt in forms with my curved handles, now I want a tartlet maker.
It turned out 16 pieces, baked with convection at 200 degrees for 13 minutes. Excellent baskets! Loose, tasty, wonderful! Only one petal broke off, while taking it out, well, I tasted it)) yummy! Girls, bake everything))) the recipe is very, very worthy!
I'll start tomorrow or the day after tomorrow, for my nephew's birthday on Tuesday. until I put it in the cold? Or leave at room temperature?

I will add another photo of the bottom

Parallel, Gulya, I'm glad you liked the result! And thank you very much for describing how I baked in the oven
You have not even baskets, but gorgeous sand flowers turned out. Wonder how good they are!
I hope your experience in the oven is useful to our followers

About the baskets.
While they are cream free, they can be stored outside the refrigerator, just in a bag or box. There isn't much to spoil there. This is still an ordinary shortbread cookie.
And when they are with a cream in which there is milk, then it is better to put them in the fridge - it will be safer, and someone prefers a cold cream.
However, even with the cream for a short time, for example, a day, it is quite possible to store them without a refrigerator.
For example, I try to take them out at least 15 minutes before eating so that everything is at room temperature - it tastes better for me.

By the way, it seems to me that about 2/3 of the cream recipe will be enough for you.
A little tip: make the cream a little thicker, cool well and shape it into balls like rafaello or hemisphere candies. On a colored jam in such chic flowers, such balls will look like the middle of a flower - it will turn out quite elegantly for a nephew's birthday table.
And it is better to choose a sour jam. If there is no ready-made, then you can use the lemon Kurd - with it you get a gorgeous result.
If there is no lemon, then it can be made from an apple, just add lemon, if the apple is without acidity.
Or not a Kurd, but a coolie to do - it's generally elementary.

Oh, girls, somewhere I have a "lemon Kurd" out of nothing. It will also be necessary to declassify it for the same lazy and greedy as me
Yuliya K
Olga, thanks for the interesting recipe, I took it to the bookmarks! There is no tartlet girl yet (), but I think to try it first in the oven. The recipe impresses with its graceful simplicity, I love these!

Oh, yes, I have an orange-lemon Kurd))) but I plan to make it in cupcakes. I'm thinking of making a raspberry coolie here, it seems to me it will be super with coconut. Only there is no corn flour, I will probably make a cream with ordinary flour. I'll add white chocolate, just the taste of rafaello will be.

With wheat flour, a little "no" cream turns out. Do you have rice flour? It will also be delicious with it, really better than with wheat. However, white chocolate can improve the situation.
Good luck!
And I'm waiting for a report

Olya, what delicious baskets! While they were baking, they ate almost half. Made not sweet with butter and salmon.

irman, Irisha!
What are your even baskets! I can imagine how delicious it is!
How much sugar did you put in the dough? She took ready-made mayonnaise or made it herself according to this recipe, i.e. without acid and mustard?
Did you take the butter for filling in its original form or combined it with something?
I, under the fish, usually beat the butter with finely chopped dill, and sprinkle a little lemon juice on top of the salmon.
Oh, I already wanted to quickly build it myself
irman
Ol, I did everything according to your recipe. I put 1 tsp on sugar tartlets, it took a little less than 250 grams of flour, took the oil in its original form. Next time I'll do it your way (whisk butter), thank you

Natasha, it seems to me that, like any shortbread cookie, these baskets in an unopened state can be stored well even without a refrigerator. But I have nothing for 5-6 days

The Kurds are presented on our forum in different versions, I focus on the availability of products.
Here recipe, more, more, more...
Those. there are many options. It is, in fact, a lemon butter custard.
You can build it based on your favorite recipes and even in vegetable oil.
Or you can make an apple, add lemon and lemon zest - it's also cheap and cheerful.
Cooley even easier, and also delicious.
There is also secret filling from the light.
Those. many options are fast and inexpensive.
Good luck!

Olga, thank you very much! How interesting! And how I used to pass by such simple-to-perform delicious treats from improvised products ?! I will try on the weekend At the same time, I will try to leave the basket for a week to find out if something will change (in May it will be necessary to make a small buffet for work, and maybe a buffet on Friday, then the blanks are good to do on the eve of the weekend, in the evening after work I will hardly be capable of it).
Thanks again!!!

Everything worked out very well with sour cranberry jelly.
