Ingredients

Dough
raw grated carrots 320 gram
wheat flour / grade 310 gram
regular sugar + brown 250 (60) = 310 grams
vegetable oil b / s 180 milliliters
kefir (yogurt, buttermilk) 120 milliliters
egg C1 4 pieces
any ground nuts 150 grams
soda 2 teaspoons under the knife
baking powder 1 teaspoon under the knife
salt 1/2 tsp
cinnamon 1 tbsp + 1 tsp
ground allspice 1/2 tsp
nutmeg 1/4 teaspoon
vanilla pinch
orange peel 1 tsp
Filling
cream cheese 225 gram
sugar 80 gram
egg C1 1 piece
wheat flour / grade 3 tbsp. spoons
lemon juice 1 tsp
salt pinch
vanilla pinch
Glaze
cream cheese 110 gram
butter 40 grams
Orange juice 2 tbsp. spoons
lemon juice 2 tsp
powdered sugar 300 grams
vanilla pinch

Cooking method

I found the cake recipe in a foreign blog. Changed nothing, except for the amount of sugar (reduced). Hands shook while putting so much soda and cinnamon. But ... the cupcake is great! Very tasty. No soda smell, no cinnamon bustle. Although we all have different taste buds. A worthy royal cupcake.

Spicy carrot baked goods! I just love. But for some reason I never tried to stuff a cupcake with something. Such thoughts came, but it seemed that this would make the cake heavier and it would not be baked. Thank you, now I know that this is possible :-)

I had a can of ricotta tucked away for this cake, but by the time of baking it turned out that it was poorly hidden and "only half full." Therefore, I decided to donate an authentic glaze and made it with sour cream. Of course, it turned out not so snow-white and beautiful.

Into this Soviet mold (Yuliya K,) with a volume of 1.5 liters (full volume - to the edge) exactly half of the dough and fillings measured on the scales fit perfectly. The dough took up the ideal "2/3 mold". That is, there are exactly two such cupcakes. With carrots I was self-willed - I rubbed it on a very fine grater - so I don't have such a crumbly structure like the girls in the photo. Well ... as I suspected - it's very tasty - almost cake. Juicy and unpleasant. The amount of sugar in the dough is optimal for my taste.

P.S: And from what, I wonder, are these dark blotches formed during baking? Not nuts. Cinnamon ... nutmeg? Mine in general decided that there are prunes - well, I did not disappoint them.
