Chestnut cream with vanilla

Ingredients

chestnuts 1 kg
granulated sugar 500 g
water 250 ml
vanilla (pod) 1 PC

Cooking method

  • Wash the chestnuts and cut crosswise.
  • Boil water in a saucepan, place the chestnuts in it and cook in boiling water for 10 minutes.
  • After the time has elapsed, drain the water, peel the chestnuts. The upper coarse layer is easily removed, while the lower one can be cleaned worse, you can partially leave it, after the second cooking they can be removed easily.
  • Place the peeled chestnuts in a saucepan and add water to cover the fruits. Cook over low heat for about 35-40 minutes, until the chestnuts are completely softened.
  • Drain the water (but do not pour it out, it will come in handy), remove the skin, now it separates easily. Rub the chestnuts through a sieve or chop with a blender. I like to wipe it through a sieve, the consistency is better.
  • Pour water into a saucepan with a thick bottom, add sugar and vanilla pod, bring until sugar is completely dissolved and syrup boil.
  • Add the chestnut puree. Remove the vanilla pod, cut, remove the seeds and return to the pot. Stir and cook until thick.
  • Pour the cream into sterilized jars and close the lids. Store in a place protected from light and heat.
