Amaretti is a very famous and popular Italian puff pastry, which has spread all over the world. There are many variations of it, the main ones are two: the softer version of the cookies - Amaretto Sassello and the more crumbly version - Amaretto di Saronno.
The history of Amaretti di Saronno began in 1718. According to legend, in honor of the arrival of Cardinal Milan in Saronno, two lovers made a dough of sugar, apricot kernels and protein and baked small cookies, which were named "amaretti" because of their slightly bitter taste. Carlo Lazzaroni, from a family of Milanese pastry chefs, bought the amaretti shop in Saronno and established an industrial biscuit production in Milan.
In the classic version, these are small, dry and crispy cookies. Cookies are made from sweet and bitter almonds, taken in a 3: 1 ratio, or Chinese apricot seeds, as well as sugar and protein. Sometimes liqueur, chocolate or other additives are added to it. Thanks to quality products and baking at a low temperature, the cookies acquire a unique flavor.
