Cherry confit
Cherry puree 200g
Granulated sugar 50g
Corn starch 10g
Gelatin + water 5g + 30g
Cherry cream
Cherry puree 100g
Granulated sugar 25g
White chocolate 40g
Egg yolk 2 pcs
Gelatin + water 5g + 30g
Lavender mousse
White chocolate 300g
Cream 33-35% 400g
Milk 3.5% 180g
Gelatin + water 12g + 60g
Lavender flowers (dried) 2 tsp
Cream cheese
Cottage cheese 120g
Room temperature butter 50g
Powdered sugar 55g

Cooking method

  • "I blinded him from what was!" Well, what happened - someone tried it, someone saw pictures in Temko, and someone will watch for the first time!
  • Just want to write about the biscuit layer. You can make it with any biscuit you love! I have now repeated the cake exactly in the form in which I prepared it for our meeting. And I had a biscuit Irisha Kara.
  • So let's get started! We begin to prepare cherry confit.
  • First, soak the gelatin in cold water to swell.

  • Lavender Cloud Cake (Offline Feb 2017)Mix chocolate and swollen gelatin. Pour the hot yolk-berry mass over the chocolate. Let stand for a minute and mix everything thoroughly until smooth. I use a tall glass and blender leg. Cool the mass to room temperature and pour on top of our cherry confit. Send it back to the freezer.

Add curd cheese and mix everything well. You can use a spatula, I always prepare this cream in a stationary mixer, first whisk the butter and powder thoroughly with a whisk, then mix the spatula with the cheese with a nozzle. You can add vanilla extract.

I also want to say a few words for those who are going to make such a cake - you can easily collect it in an ordinary ring covered with film. You can lay the blank with a biscuit down on the bottom of the ring and pour mousse over. Thoroughly level the mousse so that the top is perfectly flat. I like it better when such cakes are collected upside down. Pour the mousse, put the blank on top, biscuit up, level it and into the freezer. Then, after freeing from the ring, the top of the cake will be perfectly flat.
