Ingredients

For blueberry crust:
Flour / s 300 g
Yolks 2 pcs
Butter 200 g
Granulated sugar 100 g
Blueberry flour * + cognac 20 g + 1 tsp.
Baking powder 1/2 tsp
Salt 2 g
Vanillin At the tip of a knife
Bananas are large, ripe 4 things
For the curd layer:
Spreadable cottage cheese 5% fat, better cottage cheese from baked milk 800 g
Fermented baked milk is dense, non-drinking 2.5% fat 800 g
Semolina or semolina from durum wheat T ** 80-100 gr
Corn starch 30 g
C1 eggs + proteins 2 pcs. + 2 pcs.
Vanillin
Granulated sugar To taste (I have 6 tbsp. L.)
Homemade Strudel Spices *** 1/2 tsp

Cooking method

  • The beauty of this cheesecake is the simplicity of preparation: yes, there are many stages, but no electrical devices (including noisy ones), except for the oven and refrigerator, are required for cooking. Which cannot but rejoice, because you can make an amazing cheesecake for a princess at night or while your beloved baby is sleeping.
  • Blueberry crust:
  • Pour blueberry flour (and a dose for the cake layer, and a dose for the curd layer) with 2 tsp. boiling water and 2 tsp. brandy to swell and turn into blueberry paste. If it gets too dry, you can add some more hot water.

  • Mix sugar, yolks, salt, vanillin. We do not use proteins on purpose, because, according to some confectioners, they make the shortbread dough hard. Stir, no need to beat!

Do not worry, in the refrigerator, with the obligatory finishing in the cold, the cheesecake will acquire the desired creamy density
  • Cool the cheesecake gently, refrigerate overnight, at least 8-12 hours.
  • Gently remove the finished cheesecake from the mold - the bananas are excellent at moving away from the greased mold. And the crust just slides off the oiled baking paper. Cut with a hot dry knife.
