Cooking method

  • Dough:
  • Pour half of the onion with boiling water for 10 minutes. We do this in order to reduce the activity of onion phytoncides, otherwise the yeast in the dough will work slower.
  • Dissolve yeast in milk mixture, add cottage cheese, salt, flour. Mix everything, let the gluten in the flour swell for about 20 minutes. Transfer everything to the bucket of the bread machine, add oil.
  • Pass half the onion (from boiling water) through a garlic press, add to the future dough.
  • Knead the dough. Control the gingerbread man. If the dough will be smeared on the bottom of the bucket, add a little flour, if it is dense, pour in st. l. liquid mixture, water, milk, etc.
  • Let the dough rise 2 times, wrinkle.
  • The dough will be soft and a little sticky, it will not be super smooth due to the softness and inclusions of onions and cottage cheese, work with the dough with oily hands.
  • You can knead the dough a little denser, then it will be easier to work with it.
  • I had enough dough from the specified ingredients for 2 khachapuri.
