Ingredients

Cooking method

  • for 20-24 buns
  • In a small saucepan, heat the water and milk to a boil. Add oatmeal, bring to a boil and cook for 2 minutes over medium heat, stirring occasionally. Add butter and honey, remove from heat and cool until warm (20-30 minutes).

  • Dissolve yeast with sugar in warm water. Leave on for 5 minutes until foam forms.

  • Mix oatmeal with yeast, add 3 cups flour, wheat germ and salt; knead a soft dough, adding the rest of the flour as needed.
  • Knead the dough for 8-10 minutes. The dough should be soft and slightly sticky.

  • Form the dough into a ball and place in a greased bowl. Cover with foil and leave for 1-2 hours or until doubled.

  • Divide the dough into 20-24 pieces, cover with a towel or plastic wrap to prevent the dough from withering. Form a ball from each piece (knead a piece of dough into a cake, collect the edges of the cake in the middle and fix it like a knot - you get a ball with a stretched outer shell;
  • put the ball on a clean table (without flour), cover it with your palm and make 20-30 quick circular movements with your hand, holding the ball with your fingers, the ball should rotate freely;
  • friction should occur between the dough and the table so that the ball knot is secured.)

  • Arrange the balls in a greased mold at a distance of ~ 1 cm (I have a 37 × 25-cm / 15 × 10-inch mold) or in 2 round molds.

  • Cover the form with plastic wrap and leave for 60 minutes or until the buns are doubled.

  • Preheat oven to 190 ° C / 375 ° F.

  • Grease the buns with an egg and sprinkle with oatmeal.
  • Bake until golden brown

25-30 minutes

I did everything strictly according to the recipe, just not in the form of buns, but in the form of a loaf of bread in a rectangular shape. Very ... no, just super fluffy crumb and very rich flavor!
