Corn biscotti

Ingredients

Wheat flour 280 g
(2 cups)
Finely ground corn flour
(fine yellow cornmeal)
170 g
(3/4 cup)
baking powder 1 1/2 tsp
Salt 1 tsp
Egg 3 pcs.
Sugar 200 g
(1 cup)
Orange zest 1 tbsp. l.
Lemon zest 1 tbsp. l.

Cooking method

  • Preheat oven to 160 ° C / 325 ° F. Line a baking sheet with baking paper.

  • Beat sugar and eggs with a mixer until fluffy, light mass, 3 minutes; add zest at the end. Combine the rest of the ingredients in a small bowl. Add dry ingredients to the egg mass, stir (the dough is soft and sticky). Let the dough stand for 5 minutes.

  • Spoon the dough onto a baking sheet, forming 2 strips. Use wet hands to form 27 x 8-cm (11 x 3-inch) cubes.

  • Bake for 30-35 minutes, until light golden brown. Remove from the oven and cool for 5 minutes. Using a serrated knife, cut the bars into 1 cm thick croutons.Place the croutons on a baking sheet and bake for another 20 minutes.
  • Cool the biscotti on the wire rack. Store in a sealed container.

The dish is designed for

30-35 biscotti

Note

These Italian biscuits are very crispy as they do not contain oil. It is good to serve with coffee - if you dip the biscotti in coffee, they become very soft. The biscotti can be poured over with chocolate, and any flavoring extract can be used instead of the zest.
