Milk pancakes, butter, on dough from old multigrain dough

Ingredients

OPARA - the first batch
Dough on old dough 300 ml.
Wheat flour 400 gr.
Fresh milk 500 ml
Active dry yeast 0.5 tsp
DOUGH - second batch
Fresh dough everything from the first batch
Fresh milk 500 ml
Fresh eggs 2 pcs.
Butter (ghee) 40-50 grams
Salt to taste (3/4 teaspoon)
White sugar to taste (2-3 tbsp. l.)

Cooking method

  • Once ... only once a year, Shrovetide comes to us!
  • Flour, oily, oily! Wide OILER!
  • For a whole week! They call it, wide, cheerful, fatty, oozing, Cheese week.
  • And you need to live it so that it would not be excruciatingly painful for not eating pancakes this week - real Russian pancakes!
  • On dough, on yeast, ruddy, perfume-like, thin in a hole like lace!
  • And so that the smell from them was intoxicatingly spicy, pancake!
  • According to legend, the Slavs learned the secret of yeast dough through the Scythians from the inhabitants of the Black Sea Greek settlements. Traditional Russian yeast pancakes are loose, soft, fluffy, porous. As a result, ready-made pancakes perfectly absorb liquid butter, cream, sour cream and become tender, juicy and shiny.
  • And when the pancakes are already on the table, it is impossible to tear yourself away from them
  • Yes, such pancakes take more time than simple ones - but it's worth it!
  • COOKING PROCESS
  • 1. Old dough.
  • I use my work on the old test:
  • Milk pancakes, butter, on dough from old multigrain doughWheat bread made from old dough
    (Admin)
  • How I store and prepare old (sour) dough for kneading
  • Only recently, I have been making old dough with the addition of a large amount of multi-grain flakes, which are a lot after making fermented jelly. And on this old multi-grain dough I bake bread.
  • Milk pancakes, butter, on dough from old multigrain doughHealthy breakfast: jelly from fermented (fermented) rolled oats
    (Admin)
  • I took an old multi-grain dough, updated it a little: I added some water, wheat flour to it, mixed with a whisk. I closed the jar with a lid, left only a small hole in the lid for air access, put the dishes in the refrigerator on the upper (warm) shelf. And the dough stood there for 3-4 days, at first it actively "excited", rested against the lid (fortunately, the lid was firmly held on the jar), then it settled and became quiet.
  • Milk pancakes, butter, on dough from old multigrain dough Milk pancakes, butter, on dough from old multigrain dough
  • But, there are many bubbles inside, the dough is active. Dark crumbs on the surface are crumbs of multi-grain cereal flakes.
  • Here, this is a dough dough and I will use it for pancakes.
  • Milk pancakes, butter, on dough from old multigrain dough Milk pancakes, butter, on dough from old multigrain dough
  • 2. OPARA - the first batch
  • Remove the dough from the refrigerator and warm it at room temperature for about an hour.
  • Heat milk to 40 * C. Pour into a large saucepan so that the dough can rise freely.
  • Add dough from a jar to the milk, flour (all!), A little yeast, to activate the dough and dough.
  • Stir the dough gently so that there are no lumps. Already now the dough is springy under the scapula, from the presence of multi-grain dough.
  • Milk pancakes, butter, on dough from old multigrain dough
  • We close the pan with a lid, put it in a warm place until the dough rises 2-2.5 times. I don't look at the time, the main thing is the increase in volume.
  • When the dough-dough increases in volume, lower the dough. Stir it with a whisk-spoon-spatula. And now let's move on to making pancake dough.
  • 3. DOUGH - second batch
  • Add eggs, salt, sugar, butter or ghee to a saucepan with dough (heat slightly, soften), mix the dough.
  • Now add the remaining warm milk to the saucepan.According to the thickness of the dough, you should immediately make it "like for pancakes", for which try it with a ladle, how much it matches the consistency of the pancake dough.
  • If after adding milk the dough turns out to be very thin, add a little flour.
  • If after adding milk the dough is still thick, add a little milk or water.
  • Mix the dough thoroughly. Close the lid and put in a warm proofer until it is almost doubled.
  • ABOUT DISTANCE: we immediately make the dough of the desired pancake thickness, since no ingredients can be added to the finished dough - we will immediately bake pancakes. If you add more ingredients, then you will need to let the dough rise-distance again.
  • 4. BURNING PANCAKES.
  • We take out the pan with the dough, set it down with a spatula whisk. The dough is well-spread, small bubbles on the surface.
  • Pancakes can now be baked.
  • Preheat a frying pan (or several at once) until strong.
  • The pan can be greased with vegetable oil, with a brush, lightly. Or you don't need to grease it if you are sure that the pancakes will not stick to the pan.
  • We collect the required amount of dough into the ladle, and spread it over the pan, very thinly. Or thick - these are already personal preferences)))
  • We put the pan on the fire and bake pancakes on both sides until golden brown.
  • Milk pancakes, butter, on dough from old multigrain dough Milk pancakes, butter, on dough from old multigrain dough Milk pancakes, butter, on dough from old multigrain dough
  • Put the finished pancakes on a dish, brush them with melted butter or ghee, and cover the stack of pancakes with a lid - let the butter soak into the pancakes, they will become oily, tasty, soft. Shrovetide, however!))
  • Milk pancakes, butter, on dough from old multigrain dough
  • Milk pancakes, butter, on dough from old multigrain dough
  • And you get such gorgeous pancakes!
  • Milk pancakes, butter, on dough from old multigrain dough
  • Milk pancakes, butter, on dough from old multigrain dough
  • Milk pancakes, butter, on dough from old multigrain dough
  • With the taste and smell of dough, and spring!
  • Well, we will have pancakes with sour cream, honey, jam ... or with caviar, lightly salted fish, herring ... then everywhere that is prepared for the oil week)))

Bon appetit, everyone!
Delicious pancakes!
Let's go fast on Monday!

Chekhov A. P. "Pancakes" story
Times give in and gradually disappear in Russia ancient customs, clothes, songs; much has already disappeared and has only historical interest, and yet such nonsense as pancakes occupies the same firm and familiar place in the modern Russian repertoire as it did 1000 years ago. There is no end in sight to them in the future either ...

Taking into account the venerable age of pancakes and their extraordinary, centuries-old durability in the fight against innovation, it is a shame to think that these delicious circles of dough serve only narrow goals of culinary and wellbeing ... It's a shame both for the prescription and for the approximate, purely Spartan stamina .. Law, cuisine and belly do not last a thousand years.

As for me, I am almost sure that the many-speaking old pancakes, in addition to cooking and gluttony, have other ultimate goals ... In addition to the hard, hard-to-digest dough, they contain something higher, symbolic, perhaps even prophetic ... But what exactly?

I don't know and I won't know. This constituted and still constitutes a deep, impenetrable feminine secret, which is as difficult to reach as it is to make a bear laugh ... Yes, pancakes, their meaning and purpose are the secret of a woman, such a secret that a man will hardly soon learn. Write an operetta!

Since prehistoric times, the Russian woman has piously kept this secret, passing it on from one generation to another only through her daughters and granddaughters. If, God forbid, at least one man recognizes her, then something terrible will happen that even women cannot imagine. Neither wife, nor sister, nor daughter ... no woman will give you this secret, no matter how dear you are to her, no matter how low she may fall. It is impossible to buy or exchange a secret. His woman does not utter neither in the heat of passion, nor in delirium. In a word, this is the only secret that has managed not to wake up through such a frequent sieve as the fair half for 1000 years! ..

How are pancakes baked? It is not known ... Only the distant future will know about this, but we, without reasoning and without asking, should eat what we are served ... This is a secret!

You will say that men also bake pancakes ... Yes, but men's pancakes are not pancakes. They breathe cold out of their nostrils, on their teeth they give the impression of rubber galoshes, and in taste they are far behind women ... Cooks must retreat and admit themselves defeated ...

Pancake cookies are an exclusively feminine affair ... Cooks should have long understood that this is not just pouring batter over hot pans, but a sacred rite, a whole complex system where there are their own beliefs, traditions, language, prejudices, joys, sufferings ... Yes, suffering ... If Nekrasov said that the Russian woman was exhausted, then the pancakes are partly to blame ...

I do not know what the process of baking pancakes consists of, but the mystery and solemnity with which the woman furnished this sacred rite is somewhat known to me ... There is a lot of mystical, fantastic and even spiritualistic ... Looking at a woman baking pancakes, one might think that she summons spirits or extracts a philosopher's stone from dough ...

Firstly, no woman, no matter how developed she is, will never begin to bake pancakes on the 13th or under the 13th, on Monday or on Monday. Pancakes don't work out these days. To get around this, many quick-witted women begin to bake pancakes long before Shrovetide, so households have the opportunity to eat pancakes on Shrove Tuesday and the 13th.

Secondly, on the eve of pancakes, the hostess is always mysteriously whispering about something with the cook. They whisper and look at each other with such eyes, as if they are composing a love letter ... After the whispering, they usually send the kitchen boy Yegorka to the shop for yeast ... will certainly say:

“This yeast is no good. Go, you nasty boy, tell them to give you better ...

The boy runs and brings in new yeast ... A large skull jar is taken for this and poured with water in which the yeast and a little flour bloom ... When the yeast has blossomed, the lady and the cook turn pale, cover the jar with an old tablecloth and put it in a warm place.

- Look, don't oversleep, Matryona ... - the lady whispers. - And so that your bank was warm all the time!

This is followed by a restless, agonizing night. Both, the cook and the lady, suffer from insomnia, but if they are asleep, they are delirious and have terrible dreams ... How happy you men are that you don't bake pancakes!

Before the gloomy morning is dark outside the window, the lady, barefoot, disheveled and in one shirt, is already running into the kitchen.

- Well? Well, how? - she throws questions at Matryona. - A? Answer me!

And Matryona is already at the can and pouring buckwheat flour into it ...

Thirdly, women strictly make sure that any outsider or male household does not enter the kitchen while pancakes are being baked there ... Cooks do not even let firefighters in at this time. You can neither enter, nor look, nor ask ... If someone looks into a skull jar and says: "What a good dough!", Then at least pour it out - the pancakes will not work! It is unknown what women say while baking pancakes, what spells they read.

Exactly half an hour before the dough is poured into the pans, the red and already tortured cook pours some hot water or warm milk into the jar. The lady stands right there, wants to say something, but under the influence of sacred horror she cannot pronounce it. And the household at this time, in anticipation of pancakes, walk through the rooms and, looking at the face of the hostess who runs into the kitchen every now and then, think that they will give birth in the kitchen, or at least get married.

But, finally, the first pan hisses, followed by another, a third ... The first three pancakes are waste paper that Yegorka can eat ... but the fourth, fifth, sixth, etc. are put on a plate, covered with a napkin and rushed into the dining room to those who have long been thirsty and hungry. The hostess carries it herself, red, shining, proud ... One might think that she is not holding pancakes, but her firstborn.

Well, how do you explain this triumphant look? Towards evening, the lady and the cook from exhaustion can neither stand nor sit. They look suffering ...Still, it seems, a little, and they will order to live long ...

This is the outer side of the sacred rite. If pancakes were intended exclusively for base gluttony, then, you see, then neither this mystery, nor the described night, nor suffering would be understandable ... Obviously, there is something, and this "something" is carefully hidden.

Looking at the ladies, one should nevertheless conclude that in the future pancakes will have to solve some great, world problem.

V. Nikiforov-Volgin. The story "Eves of Great Lent"

Shrovetide came in a light blizzard. ... The people smelled like pancakes. The rich baked pancakes from Monday, and the poor from Thursday. Mother baked pancakes with prayer. She put the first baked pancake on the dormer in memory of her deceased parents. Mother talked a lot about the village Shrovetide, and I was very sorry why my parents decided to move to the city. Everything was different there. In the village Maslenichny Monday was called - meeting; Tuesday - flirting; Wednesday - gourmet; Thursday - fracture; Friday - mother-in-law's evening; Saturday - sister-in-law's gatherings; Sunday - farewell and forgiveness. Shrovetide was also called Boyarynya, Tsarina, Ossudarynya, Mother, Gulena, Krasava. They sang songs woven from the stars, the sun's rays, the golden horns of the moon, from the snow, from rye ears.
During these days everyone was merry, and only one church mourned in its evening prayers. The priest had already read the Lenten prayer of Ephraim the Syrian "Lord and Lord of my life." Forgiveness Sunday has arrived. In the afternoon we went to the cemetery to say goodbye to our departed relatives. In church, after Vespers, the priest bowed to the feet of all the people and asked forgiveness. Before going to bed, they bowed down to each other, hugged and said: "Forgive me, for Christ's sake," and to this they answered: "God will forgive." On this day, in the village, yarn was grown, that is, they put a skein of spinning on the morning dawn so that the whole spinning was clean. I dreamed of the coming Great Lent, for some reason in the image of the Monk Sergius of Radonezh walking in the snow and leaning on a black hegumen's staff.
Today is Saturday, the penultimate day of Shrovetide. Tomorrow forgiven Sunday!

I sincerely PROPOSE: "FORGIVE ME, CHRIST'S GLAD!"

And from all my heart I ANSWER: “GOD FORGIVE! And I FORGIVE! "
