Chicken liver and hearts pate

Ingredients

liver 300 gr
hearts 500 gr
onion 1-2
carrot 1
Provencal herbs ...
ground pepper ...
olive oil ...

Cooking method

Soak the hearts well from the blood, cook separately from everything in salted water.
Lightly sauté the finely chopped onion in olive oil, add the carrots grated on a coarse grater, sauté together until semi-cooked.
Washed, cut free from films and compounds, add to the onion with carrots, add Provencal herbs, pepper, add a little water, if necessary, stew until tender.
Grind the hearts in a chopper until smooth.
Do the same with the liver.
Combine the mass of hearts with the liver mass, equalize the salt, if necessary, add liquids from the saucepan where the hearts were boiled. Mix everything well into a homogeneous mass. Wipe through a fine strainer, I have a plastic one with a soft mesh, put it tightly in a deep plate or other suitable container, tighten with cling film. Keep refrigerated.
If desired, you can add butter to the mass, but I do not add it, because I spread butter under the pate on the loaf or bread.
Without hearts, the pate is less tasty.

You can add warm soft butter at room temperature, mix well into the mass. It is not worth putting a lot of oil at once, it is better to try with a small weight and determine how much you need according to your taste. You have to try.

Brought a huge THANKS !!! It is a pity that I did only half a portion for the test - I ate it with my husband in 1.5 days (I actually did it only for myself, but he sat down). I did it without butter, and I didn't smear the bread - and without butter everything was very tasty and juicy! I will definitely repeat))

Very good, you can't help but like this pate, because it is delicious.
It's a pity, in our meat shop there are not always hearts, maybe they are bought up for cats quickly, I don't know. In general, I do not like sandwiches, but I love them with this pate. Specially I bake sandwich bread for this pate.
