Oat flour 250 g
Wheat flour 250 g
Water 350 ml
Fresh yeast 10 g
Salt 8-10 g
Vegetable oil 1-1.5 tbsp. l.

Cooking method

  • Knead in a bread maker on the "Dough" program for approx. 1.5 hours.
  • We form bread, a loaf or buns, put in a greased form. We leave for 20-30 minutes. for lifting.
  • Preheat the oven to 230-240 * С. Sprinkle the matched dough and the oven with water, bake for 10 minutes. Then we reduce t * to 190-210 * C and bake until tender for 30-45 minutes (check with a thermometer, t = 94-98 * C).

I set the temperature (without removing the loaf from the oven) 230 *, sprinkled the loaf and the oven with water, after 10 minutes reduced it to 210 *. After 30 minutes, I took out a small bun, and the loaf was baked for about 15 minutes (the form is aluminum) by inserting a temperature probe. When it reached 97 * inside the loaf, I took it out and, having greased it with vegetable oil, wrapped it in a towel.
