Transcarpathian mushroom soup

Ingredients

dry porcini mushrooms 30 grams
water 1.5 liters
carrot 1 piece
turnip onion 2 pieces
flour 2 tbsp. spoons
butter 80 gram
vegetable oil 1 tbsp. the spoon
ground black pepper taste
sour cream 200 grams
salt taste

Cooking method

This dish is brewed mainly in the Carpathians. There are a lot of recipes for yushka. Each housewife has her own, like borscht. Yushka is cooked not only from dry white mushrooms, but also from any others, both dry and fresh. Yushka can be tasted in any hut in the mountains. KOLYBA, a temporary, more often log house of Hutsul lumberjacks and shepherds, without windows, with a gable or pyramidal roof with a hole for smoke. In the center of the hut there is a place for an open fire. Nowadays cafes and restaurants are called kolyba.
