Yeast potato dough without eggs and milk

Ingredients

dry yeast 3 tsp
sugar 1-2 tbsp. l.
salt 1 tsp
vegetable oil 1 tbsp. (3/4 +1/4)
wheat flour, premium or 1 grade 7 glasses (+ -)
potatoes 200-300 gr
water 500 ml

Cooking method

  • We make a milk and egg substitute: cut the potatoes into small pieces and cook until tender in 500 ml of water. It is better to cook in a slow cooker so that the water does not evaporate. Mnem (crush) the finished potatoes by adding a decoction. As a result, we should get a jelly-like mass. If we suddenly get less than 500 ml of liquid, then we just add water.
  • Cool this mixture to 40C, add yeast, salt, sugar, 3/4 of vegetable oil and gradually introduce flour, but not all of it.
  • Cover the resulting not quite finished dough with foil and leave at room temperature for 20-30 minutes. After the time has elapsed, add the rest of the oil and add the flour again, knead the dough and send it for proofing.
  • After proofing, we proceed to baking. You can simply bake a tortilla (a kind of focaccia), pies with savory filling (the dough has a salty taste), pies.

PS. The test is not enough. Therefore, I divided it into 2 parts and mixed it in HP on the Pelmeni mode in two passes.
