Spinach with pkhali nuts

Ingredients

Spinach 2kg
Walnuts 200gr
Fresh coriander 1 bundle
Parsley 0.5 bundle
Onion 2 heads
Garnet 0.5 pcs
Wine vinegar 9% 2 tbsp. l
Ground coriander seeds 1 tbsp
Blue fenugreek (utskho-suneli) 1 tsp
Imeretian saffron 1 tsp
Garlic 5-6 teeth
Hot red pepper taste
Salt taste

Cooking method

  • Boil the spinach and discard in a colander. After cooling down, pick up a large snowball and squeeze well. Finely chop the spinach. Add finely chopped onion, herbs, crushed garlic, spices, vinegar. ground nuts. Mix everything thoroughly. If cooking for guests, roll up the balls. Place pomegranate seeds in the middle of each ball. This portion is enough for a table of 15 people. Canned or frozen can be used. Blue fenugreek (utskho-suneli) should not be confused with hay fenugreek (shambhala, fenugrek, chaman)

Gayane, I don't have spinach, but there are a lot of beet leaves and kale. I cooked phali from both. The beets are more tender than cabbage, but both are delicious.
